【摘要】：目的了解幼兒園食堂實施量化分級管理的效果及存在的問題,為進一步加強幼兒園食堂管理提供依據(jù)。方法結合幼兒園食堂本身的特點,將適用于普通餐飲業(yè)的量化評分表在一些指標上進行調整。分別于2006年和2010年對銅陵市22家幼兒園食堂進行量化分級管理并進行效果分析。結果實施量化分級管理后,各幼兒園食堂食品安全管理水平不斷提高,A,B級單位構成比分別由2006年的18.2%,27.3%上升到2010年的35.0%,30.0%;C級單位構成比由54.5%下降到35.0%。4 a來,衛(wèi)生許可得分率有所提高,主要體現(xiàn)在C,B級上,而A級變化不大。經(jīng)常性衛(wèi)生監(jiān)督得分率變化不大。結論量化分級管理的實施,有效地提高了幼兒園食堂食品安全現(xiàn)狀,監(jiān)管部門要加強食堂管理人員的培訓,促進管理模式的精細化。
[Abstract]:Objective to investigate the effect of the implementation of quantitative classification management of canteens and problems, provide the basis for further strengthening the kindergarten canteen management. Combined with the characteristics of kindergarten canteen itself, will apply to ordinary food and beverage industry rating scale adjustment in some indexes. Respectively in 2006 and 2010 of 22 kindergarten canteens in Tongling City conducted quantitative classification management and effect analysis. The results of the implementation of quantitative classification management, the kindergarten canteen food safety management and constantly improve the level of A, respectively, by 2006 18.2% B units, 27.3% rose to 35% in 2010, 30%; constituent ratio decreased from 54.5% to 35.0%.4 a to C level, health permit score rate improvement is mainly reflected in the C, B level, and a little change. Regular health supervision score rate changes little. The quantitative management can effectively improve the conclusion. The status of food safety in kindergarten canteen, the supervision department should strengthen the training of canteen management personnel, and promote the fine management model.
