【摘要】：豫菜文化是中國(guó)飲食文化的重要代表,豫菜菜譜英譯可以讓西方世界更好地了解河南飲食文化以及中國(guó)飲食文化。豫菜菜譜與西餐菜譜既有差異性又有同構(gòu)性,這就為菜譜翻譯的套譯法提供了理?yè)?jù)。套譯法能夠充分發(fā)揮譯入語(yǔ)的優(yōu)勢(shì),使譯文利于受眾接受。將豫菜菜譜與西餐菜譜進(jìn)行對(duì)比研究,分析其構(gòu)成方式和命名理念的異同,并運(yùn)用大量實(shí)例證明套譯法在豫菜菜譜英譯中的應(yīng)用價(jià)值,這對(duì)開展中餐菜譜翻譯和中國(guó)飲食文化外宣具有啟迪意義。
[Abstract]:Henan cuisine culture is an important representative of Chinese food culture. English translation of Henan cuisine recipe can help the western world better understand Henan food culture and Chinese food culture. There are differences and isomorphism between the menu of Henan cuisine and that of western cuisine, which provides the basis for the translation of recipes. The method of translation can give full play to the advantages of the target language and make the translation more acceptable to the audience. This paper makes a comparative study of the menu of Henan cuisine and that of western cuisine, analyzes the similarities and differences of its composition and naming ideas, and proves the application value of the set translation method in the English translation of Henan cuisine recipes by a large number of examples. It is instructive for the translation of Chinese cuisine and the publicity of Chinese food culture.
