基于QFD的中餐連鎖企業(yè)供應(yīng)鏈優(yōu)化研究

【摘要】:近幾年來(lái),我國(guó)餐飲業(yè)處于高速發(fā)展的狀態(tài),中餐連鎖企業(yè)逐漸占據(jù)餐飲市場(chǎng)的主導(dǎo)地位。但是,中餐連鎖企業(yè)始終面臨著擴(kuò)張難,標(biāo)準(zhǔn)化、機(jī)械化難以操作的問(wèn)題,其中很大的原因是中餐連鎖企業(yè)的供應(yīng)鏈發(fā)展始終處于比較落后的水平,如缺乏順暢的物流配送系統(tǒng)、信息化水平不高、生產(chǎn)加工沒(méi)有標(biāo)準(zhǔn)化等,這些問(wèn)題都在一定程度上制約了我國(guó)餐飲連鎖企業(yè)的持續(xù)發(fā)展。如何對(duì)餐飲連鎖企業(yè)的供應(yīng)鏈體系進(jìn)行優(yōu)化,提高餐飲供應(yīng)鏈上每個(gè)顧客的滿意度,提升中餐連鎖企業(yè)的競(jìng)爭(zhēng)力,是本文研究的主要內(nèi)容。 作者通過(guò)以供應(yīng)鏈顧客需求為導(dǎo)向的質(zhì)量功能展開(kāi)(Quality Function Deployment; QFD)方法,對(duì)中餐連鎖餐飲企業(yè)供應(yīng)鏈優(yōu)化問(wèn)題進(jìn)行研究。本文首先進(jìn)行餐飲供應(yīng)鏈顧客需求展開(kāi),即確定供應(yīng)鏈顧客需求和各顧客需求的重要度,從而來(lái)確定餐飲供應(yīng)鏈優(yōu)化目標(biāo)。然后進(jìn)行餐飲供應(yīng)鏈優(yōu)化措施展開(kāi),即確定餐飲供應(yīng)鏈優(yōu)化措施、各措施的自相關(guān)關(guān)系以及優(yōu)化措施與供應(yīng)鏈顧客需求之間的相關(guān)關(guān)系;最后通過(guò)供應(yīng)鏈顧客需求對(duì)優(yōu)化措施的映射,確定優(yōu)化措施的最終重要度。為中餐連鎖企業(yè)在供應(yīng)鏈優(yōu)化上提供了相關(guān)建議。
[Abstract]:In recent years, China's catering industry is in a state of rapid development, Chinese food chain enterprises gradually occupy the leading position in the catering market. However, Chinese food chain enterprises are always faced with the problems of difficult expansion, standardization and mechanization, among which the supply chain development of Chinese food chain enterprises is always in a relatively backward level. Such as the lack of a smooth logistics distribution system, the level of information is not high, the production and processing is not standardized, these problems have restricted the sustainable development of Chinese catering chain enterprises to a certain extent. How to optimize the supply chain system of catering chain enterprises, improve the satisfaction of every customer in the catering supply chain and enhance the competitiveness of Chinese food chain enterprises are the main contents of this paper. Based on the quality Function Deployment; QFD) method, the author studies the supply chain optimization of Chinese food chain catering enterprises. In this paper, first of all, the catering supply chain customer demand expansion, that is, to determine the supply chain customer demand and the importance of each customer demand, so as to determine the catering supply chain optimization objectives. Then the optimization measures of catering supply chain are carried out, that is, to determine the optimization measures of catering supply chain, the autocorrelation of each measure and the correlation between the optimization measures and the customer demand of the supply chain; Finally, the final importance of the optimization measures is determined by mapping the customer demand to the optimization measures. For Chinese food chain enterprises in the supply chain optimization to provide relevant advice.
