校內(nèi)星級酒店實訓(xùn)基地的運行機制分析——以百川花園酒店為例

【摘要】:由山東旅游職業(yè)學(xué)院出資建設(shè)的四星級百川花園酒店,在面向市場經(jīng)營的同時,承擔(dān)了學(xué)校飯店管理系、營養(yǎng)與烹飪系等系部酒店管理相關(guān)專業(yè)學(xué)生的實習(xí)任務(wù),學(xué)校相關(guān)課題研究,教學(xué)成果展示等。參與實訓(xùn)的學(xué)生在酒店餐飲、房務(wù)部門進(jìn)行實習(xí)實訓(xùn),學(xué)習(xí)酒水營銷、廚房設(shè)備、菜品知識,熟悉總辦、人事、文秘等工作崗位流程。
[Abstract]:The four-star Baichuan Garden Hotel, which is funded by Shandong Tourism Vocational College, is facing the market and has assumed the internship task of the hotel management department, the nutrition and cooking department and other departments of the school, as well as the students majoring in hotel management. The school related topic research, the teaching result display and so on. Students who participate in the training in hotel catering, room department practice training, study wine marketing, kitchen equipment, food knowledge, familiar with the general office, personnel, secretarial and other job processes.
