【摘要】:隨著國(guó)家經(jīng)濟(jì)的快速發(fā)展和人民生活水平的不斷提高,餐飲消費(fèi)市場(chǎng)越來(lái)越繁榮,餐飲發(fā)展在提振消費(fèi)、擴(kuò)大內(nèi)需、保障就業(yè)和惠及民生方面發(fā)揮著越來(lái)越重要的作用,餐飲經(jīng)濟(jì)逐漸成為促進(jìn)國(guó)家和地區(qū)經(jīng)濟(jì)發(fā)展的重要經(jīng)濟(jì)增長(zhǎng)點(diǎn)。吉林省餐飲產(chǎn)業(yè)近年來(lái)得到了一定發(fā)展,但從全國(guó)范圍來(lái)看,吉林省餐飲產(chǎn)業(yè)的發(fā)展速度和發(fā)展質(zhì)量都不突出,F(xiàn)在正值餐飲寒潮后的快速回溫期,國(guó)家鼓勵(lì)推進(jìn)餐飲產(chǎn)業(yè)的升級(jí)發(fā)展,吉林省要抓住機(jī)遇,利用各種物質(zhì)和政策資源全面推進(jìn)餐飲產(chǎn)業(yè)的發(fā)展,提升吉林省餐飲產(chǎn)業(yè)在全國(guó)餐飲發(fā)展中的地位。本文以吉林省餐飲產(chǎn)業(yè)競(jìng)爭(zhēng)力為研究對(duì)象,首先回顧了國(guó)內(nèi)外餐飲業(yè)的研究動(dòng)態(tài),并對(duì)餐飲產(chǎn)業(yè)的相關(guān)概念和理論進(jìn)行了闡述;其次,整理分析了全國(guó)餐飲產(chǎn)業(yè)和吉林省餐飲產(chǎn)業(yè)的發(fā)展現(xiàn)狀;然后,利用修改的“鉆石模型”分析餐飲產(chǎn)業(yè)競(jìng)爭(zhēng)力的形成機(jī)制,并從規(guī)模、盈利、品牌和可持續(xù)發(fā)展四個(gè)方面構(gòu)建吉林省餐飲產(chǎn)業(yè)競(jìng)爭(zhēng)力的評(píng)價(jià)指標(biāo)體系;最后,在收集的指標(biāo)數(shù)據(jù)和構(gòu)建的評(píng)價(jià)指標(biāo)體系的基礎(chǔ)上,運(yùn)用因子分析法和聚類分析法對(duì)吉林省餐飲產(chǎn)業(yè)在規(guī)模擴(kuò)張、盈利能力、品牌塑造、可持續(xù)發(fā)展四個(gè)方面的競(jìng)爭(zhēng)力以及餐飲產(chǎn)業(yè)綜合競(jìng)爭(zhēng)力進(jìn)行實(shí)證分析。通過(guò)實(shí)證分析結(jié)果可知,吉林省餐飲產(chǎn)業(yè)的規(guī)模擴(kuò)張能力和品牌塑造能力被聚類為競(jìng)爭(zhēng)力弱的地區(qū)之列,處于全國(guó)倒數(shù)之列;盈利能力和可持續(xù)發(fā)展能力被聚類為競(jìng)爭(zhēng)力較弱的地區(qū)之列,處于全國(guó)的中等行列;餐飲產(chǎn)業(yè)綜合競(jìng)爭(zhēng)力水平屬于Ⅲ類地區(qū),處于全國(guó)餐飲產(chǎn)業(yè)發(fā)展的中等偏下行列,總體來(lái)說(shuō),吉林省餐飲產(chǎn)業(yè)競(jìng)爭(zhēng)力水平較弱。因此,本文根據(jù)吉林省餐飲產(chǎn)業(yè)發(fā)展現(xiàn)狀和實(shí)證分析結(jié)果,提出以下對(duì)策來(lái)提升吉林省餐飲產(chǎn)業(yè)的競(jìng)爭(zhēng)力水平:強(qiáng)化連鎖經(jīng)營(yíng)模式,推動(dòng)規(guī)模擴(kuò)張;注重餐飲品牌建設(shè),提升品牌競(jìng)爭(zhēng)力;加強(qiáng)餐飲人才培育,為餐飲產(chǎn)業(yè)發(fā)展提供專業(yè)人才保障;優(yōu)化產(chǎn)業(yè)環(huán)境,增強(qiáng)可持續(xù)發(fā)展能力。
[Abstract]:With the rapid development of the national economy and the continuous improvement of the people's living standards, the food and beverage consumption market is becoming more and more prosperous. Food and beverage development is playing an increasingly important role in boosting consumption, expanding domestic demand, ensuring employment and benefiting the people's livelihood. Catering economy has gradually become an important economic growth point to promote national and regional economic development. The catering industry of Jilin Province has been developed in recent years, but the development speed and quality of the catering industry in Jilin Province are not outstanding in the whole country. Now that the food and beverage industry is recovering rapidly after the cold wave of catering, the state encourages the promotion and development of the catering industry. Jilin Province should seize the opportunity to comprehensively promote the development of the catering industry using various material and policy resources. Enhance the status of the catering industry in Jilin Province in the development of national catering. In this paper, the competitiveness of the catering industry in Jilin Province as the research object, first reviewed the domestic and foreign restaurant industry research trends, and the catering industry related concepts and theories are described; secondly, Then, using the modified "diamond model" to analyze the formation mechanism of the catering industry competitiveness, and from the scale, profit, Finally, on the basis of the index data collected and the evaluation index system constructed, the evaluation index system of the catering industry competitiveness of Jilin Province is constructed in the four aspects of brand and sustainable development. Factor analysis and cluster analysis are used to analyze the competitiveness of catering industry in four aspects of scale expansion, profitability, brand building, sustainable development and comprehensive competitiveness of catering industry in Jilin Province. The result of empirical analysis shows that the scale expansion ability and brand shaping ability of the catering industry in Jilin Province are clustered into the regions with weak competitiveness and are among the countdown of the whole country. The profitability and sustainable development ability are classified as the weak competitive regions and the middle ranks of the whole country, and the comprehensive competitive level of the catering industry belongs to the third type region, which is in the middle and lower ranks of the national catering industry development. Overall, Jilin Province catering industry competitiveness level is weak. Therefore, according to the current situation and empirical analysis results of the catering industry in Jilin Province, this paper puts forward the following countermeasures to enhance the competitiveness of the catering industry in Jilin Province: strengthen the chain management model, promote scale expansion; pay attention to food and beverage brand construction, Enhance brand competitiveness, strengthen the cultivation of catering talents, provide professional talents for the development of catering industry, optimize the industrial environment, and enhance the ability of sustainable development.
