【摘要】：目的了解資陽(yáng)市市售食品微生物污染情況,為開(kāi)展食品安全風(fēng)險(xiǎn)評(píng)估與預(yù)警及制定有效的食品安全監(jiān)管措施提供依據(jù)。方法按照《四川省食品安全風(fēng)險(xiǎn)監(jiān)測(cè)實(shí)施方案》、《食品衛(wèi)生微生物學(xué)檢驗(yàn)》(GB4789)和《國(guó)家食品污染和有害因素風(fēng)險(xiǎn)監(jiān)測(cè)工作手冊(cè)》要求,采集資陽(yáng)市市售食品17類559件,開(kāi)展金黃色葡萄球菌等10種食源性致病菌檢測(cè),并對(duì)其中13類289件食品開(kāi)展一般衛(wèi)生指標(biāo)檢測(cè)。結(jié)果 2012-2016年共開(kāi)展13類289件食品一般衛(wèi)生指標(biāo)檢測(cè),不合格率為43.94%(127/289),主要不合格食品類別有自制飲品、桶裝飲用水、果蔬及沙拉類和散裝糕點(diǎn)等即食食品。共開(kāi)展17類559件食品常見(jiàn)食源性致病菌檢測(cè),不合格率16.10%(90/559),有11件生肉類樣品同時(shí)檢出2種(株)致病菌。共檢出7種101株食源性致病菌,蠟樣芽孢桿菌檢出率最高,陽(yáng)性菌株構(gòu)成比顯示金黃色葡萄球菌居首位。五年食源性致病菌檢測(cè)不合格率0%~33.3%,一般衛(wèi)生指標(biāo)不合格率20%~68%。結(jié)論資陽(yáng)市市售食品受到不同程度食源性微生物污染,即食食品衛(wèi)生狀況差,生肉類食品致病菌污染嚴(yán)重,食源性致病菌檢測(cè)不合格率逐年增長(zhǎng)。
[Abstract]:Objective to investigate the microbial contamination of food sold in Ziyang City, and to provide basis for food safety risk assessment and early warning and effective food safety supervision measures. Methods according to the requirements of Sichuan Province Food Safety risk Monitoring Program, Food Hygiene Microbiology Test (GB4789) and the National Manual of Food pollution and harmful factors risk Monitoring, we collected 559 food products of 17 kinds sold in Ziyang city. Ten kinds of foodborne pathogenic bacteria such as Staphylococcus aureus were detected and the general hygienic indexes were detected for 289 foods of 13 categories. Results from 2012 to 2016, 289 food samples of 13 categories were tested, the unqualified rate was 43.94% (127 / 289). The main unqualified food categories were homemade drinks, bottled drinking water, fruits and vegetables, salad and bulk pastry and other ready-to-eat foods. A total of 559 common foodborne pathogens were detected in 17 kinds of 559 food samples. The unqualified rate was 16.10% (90 / 559), and 11 samples of raw meat were detected with 2 strains of pathogenic bacteria at the same time. The detection rate of Bacillus cereus was the highest, and the composition of the positive strains was the highest in the proportion of Staphylococcus aureus. The unqualified rate of foodborne pathogenic bacteria in 5 years was 33. 3%, and the unqualified rate of general health index was 20. 68%. Conclusion the food on sale in Ziyang city is polluted by foodborne microorganism, the hygienic condition of ready-to-eat food is poor, the contamination of pathogenic bacteria of raw meat food is serious, the rate of unqualified detection of foodborne pathogenic bacteria is increasing year by year.
