梁河縣滇皂莢的皂角米營(yíng)養(yǎng)成分分析

【摘要】:采用國(guó)標(biāo)和農(nóng)業(yè)部部頒標(biāo)準(zhǔn)的方法,對(duì)云南省梁河縣不同單株滇皂莢的10個(gè)皂角米樣品中的一般營(yíng)養(yǎng)成分、氨基酸和礦質(zhì)元素含量進(jìn)行了測(cè)定,并用灰色關(guān)聯(lián)度分析法進(jìn)行分析。結(jié)果表明:供試皂角米樣品蛋白質(zhì)含量2.37%~3.64%,總糖及粗纖維含量均低于1%;氨基酸種類齊全,包括8種必需氨基酸及9種非必需氨基酸,且氨基酸的E/T和E/N均符合FAO/WHO理想模式;富含K、P、Ca、Mg、Na、Fe、Zn、Mn、Cu等9種礦質(zhì)元素,因此梁河縣產(chǎn)皂角米是一種高蛋白、低糖、氨基酸齊全和礦質(zhì)元素豐富,符合高K低Na飲食結(jié)構(gòu)的營(yíng)養(yǎng)保健食物。滇皂莢單株樹(shù)齡與皂角米各類營(yíng)養(yǎng)成分之間的關(guān)聯(lián)序?yàn)榘被峥偭康鞍踪|(zhì)百分含量粗纖維百分含量礦物質(zhì)元素總量總糖百分含量。
[Abstract]:The contents of general nutrients, amino acids and mineral elements in 10 samples of Dian Gleditsia sinensis from different plants of Lianghe County, Yunnan Province, were determined by the methods of national standard and Ministry of Agriculture standard. The results showed that the protein content of the sample was 2.37 ~ 3.64, the total sugar and crude fiber contents were lower than 1, and the amino acids were complete, including 8 essential amino acids and 9 non-essential amino acids. The E / T and E / N of amino acids all accord with the ideal FAO/WHO model, and are rich in nine mineral elements, such as K _ (P) P ~ ((1)), mg ~ (2 +), Na ~ ((2 +)), Fe ~ ((2 +)), Fe ~ (2 +) and mn ~ (2 +) Cu, etc. The correlation order between the age of individual tree of Dian Gleditsia acacia and various nutritive components of Gleditsia sinensis is total amino acid protein percent content crude fiber content mineral element total sugar percent content.
