2012-2016年煙臺市627份海產(chǎn)品副溶血性弧菌監(jiān)測結(jié)果分析

【摘要】:目的了解煙臺市海產(chǎn)品副溶血性弧菌的污染情況,為海產(chǎn)品安全性風(fēng)險評估及食物中毒預(yù)防提供科學(xué)依據(jù)。方法 2012-2016年在全市12個縣市區(qū)的超級市場、農(nóng)貿(mào)市場、餐飲企業(yè)及網(wǎng)店等4類采樣點,三個季度采取6個類別的海產(chǎn)品共627份,按照GB 4789.7-2013《食品安全國家標(biāo)準(zhǔn)食品微生物學(xué)檢驗副溶血性弧菌檢驗》進行檢驗。結(jié)果 (1)627份海產(chǎn)品中副溶血性弧菌的總體檢出率為27.11%,各年之間、各采樣地點之間差異無統(tǒng)計學(xué)意義(值分別為2.278、1.338,P值分別為0.685和0.720);(2)第三季度副溶血性弧菌的檢出率最高為35.22%,明顯高于第二和第四季度(X~2=14.550,P=0.001);(3)藻類與其他動物性海產(chǎn)品相比,副溶血性弧菌的污染差異無統(tǒng)計學(xué)意義(值為2.008,P值為0.848)。結(jié)論煙臺市海產(chǎn)品副溶血性弧菌的檢出率較高且持續(xù)存在,是產(chǎn)生該食源性致病菌食物中毒的安全隱患,檢出率存在季度差別,應(yīng)采取相應(yīng)措施對高發(fā)季度的海產(chǎn)品進行重點監(jiān)測和管理。
[Abstract]:Objective to investigate the contamination of Vibrio parahaemolyticus in seafood in Yantai City, and to provide scientific basis for the risk assessment of seafood safety and the prevention of food poisoning. Food and beverage enterprises and online shops and other four types of sampling points, three quarters to take 6 categories of seafood, a total of 627, Results the detection rate of Vibrio parahaemolyticus in 627 samples of marine products was 27.11%, each year, according to the National Standard for Food Safety, "examination of Vibrio parahaemolyticus". There was no significant difference among different sampling sites (P = 0.685 and 0.720%, respectively). The highest detection rate of Vibrio parahaemolyticus in the third quarter was 35.22, which was significantly higher than that in the second and 4th quarters. There was no significant difference in vibrio parahaemolyticus contamination (P = 2.008) (P = 0.848). Conclusion the detection rate of Vibrio parahaemolyticus in marine products of Yantai City is high and persistent, which is a safe hidden danger for food borne pathogenic bacteria food poisoning. There are seasonal differences in detection rate, so we should take corresponding measures to monitor and manage seafood in high frequency season.
