【摘要】：來(lái)自南極假絲酵母(Candida antarctica)產(chǎn)的脂肪酶A(CALA)作為一種生物催化劑,已廣泛應(yīng)用食品、醫(yī)藥、化妝品等領(lǐng)域,具有熱穩(wěn)定性、對(duì)映體選擇性強(qiáng)、反式脂肪酸的選擇性等特性。文中就該酶的分子結(jié)構(gòu)、克隆表達(dá)、催化特性及其特性應(yīng)用進(jìn)行綜述,旨在能發(fā)現(xiàn)該酶的新用途和新特性。
[Abstract]:As a kind of biocatalyst, the lipase from Candida antarctica has been widely used in the fields of food, medicine, cosmetics and so on. It has thermal stability and strong enantioselectivity. This paper reviews the molecular structure, cloning, expression, catalytic properties and applications of the enzyme in order to find new uses and properties of the enzyme.
