基于ICP-MS的不同來源小麥麩皮礦物元素對比分析

【摘要】:收集我國小麥主產(chǎn)區(qū)12家大型面粉企業(yè)的小麥麩皮樣品,在基本營養(yǎng)和安全品質(zhì)分析基礎(chǔ)上,采用ICP-MS重點對樣品礦物元素進行對比分析。結(jié)果表明:樣品中的膳食纖維、粗蛋白、總淀粉、粗脂肪、灰分平均含量分別為46.07%,18.77%,18.36%,3.37%,6.02%,戊聚糖占總膳食纖維的59.28%;小麥麩皮富含礦物元素,必需常量元素中K含量最高,Na含量變化最大(變異系數(shù)73.09%);必需微量元素中Fe含量最高,Se,Co含量變化最大(CV80%)。統(tǒng)計分析結(jié)果表明,小麥麩皮必需礦物元素之間存在一定的相關(guān)性,K,Mo,Mn,Se,Co是小麥麩皮必需礦物元素的特征元素,小麥麩皮中礦物元素含量存在很大的地域性特征。根據(jù)食品中污染物限量標(biāo)準,所有樣品的有毒礦物元素中As均未超標(biāo),部分樣品Cd和Pb超標(biāo)。研究結(jié)果為小麥麩皮品質(zhì)評價和開發(fā)利用提供數(shù)據(jù)支持。
[Abstract]:The wheat bran samples from 12 large flour enterprises in the main wheat production areas of China were collected. On the basis of the analysis of basic nutrition and safety quality, the mineral elements of the samples were analyzed by ICP-MS. The average contents of crude protein, total starch, crude fat and ash were respectively 46.07 and 18.36 and 3.37 and 6.02, respectively. Pentosan accounted for 59.28 percent of the total dietary fiber, and wheat bran was rich in mineral elements. The content of Na is the highest in essential constant elements (variation coefficient is 73.09), and the content of Fe in essential trace elements is the highest. There is a certain correlation between essential mineral elements of wheat bran and the content of mineral elements in wheat bran is a characteristic element of essential mineral elements of wheat bran, and the content of mineral elements in wheat bran is very regional. According to the limit standard of contaminants in food, the content of mineral elements in wheat bran is very regional. The toxic mineral elements of all samples were not in excess of the standard, while some samples of CD and Pb exceeded the standard. The results provided data support for the evaluation of wheat bran quality and the development and utilization of wheat bran.
