食品供應鏈中建立可追溯體系的博弈分析

【摘要】:近年來,食品質(zhì)量安全事件在全球范圍內(nèi)頻頻發(fā)生,我國食品質(zhì)量安全領域面臨著重大挑戰(zhàn)。一方面,與消費者和政府監(jiān)管部門相比,食品企業(yè)擁有關于產(chǎn)品的信息優(yōu)勢,許多企業(yè)以此來謀取不法利潤;與此同時,,信息不對稱問題也存在于食品供應鏈上下游各個節(jié)點企業(yè)之間,這又導致供應鏈上下游各個節(jié)點企業(yè)之間的關系難以協(xié)調(diào)以確保安全食品的供給。眾多發(fā)達國家和地區(qū)的實踐證明,具備完整的生產(chǎn)信息記錄與披露功能的食品可追溯體系能夠有效提高食品質(zhì)量安全水平,但在我國起步較晚且建設不完善。 本文從整個食品供應鏈的角度出發(fā),采取定性與定量相結合的研究方法,探究食品可追溯體系在供應鏈中建立的關鍵影響因素并提出對策建議。 首先,以文獻綜述的形式,分別從食品可追溯體系的概念與內(nèi)容、所發(fā)揮的功能作用和所涉及的相關主體行為等多個角度,歸納和總結現(xiàn)有研究成果,并在此基礎上進行分析和評述。 其次,通過對一個包含若干個同質(zhì)的食品原材料供應商、一個食品生產(chǎn)加工商以及消費者的三級供應鏈系統(tǒng)進行建模,論證了可追溯能力對食品供應鏈上下游節(jié)點企業(yè)以及整個供應鏈食品質(zhì)量安全水平的影響,定量分析了食品可追溯體系在供應鏈中建立的必要性。 再次,在演化博弈的基礎上,構建了包含食品供應鏈上游節(jié)點企業(yè)原材料供應商與下游節(jié)點企業(yè)生產(chǎn)加工商兩個群體的二級供應鏈系統(tǒng)模型,研究了使供應鏈上下游節(jié)點企業(yè)在有限理性的前提下共同建設食品可追溯體系的合作機制,得出了食品可追溯體系在供應鏈中建立的關鍵影響因素。 最后,在全面分析我國食品可追溯體系建立與實施現(xiàn)狀與難點的基礎上,結合模型所得結論,提出食品可追溯體系在供應鏈中建立與實施的對策建議。
[Abstract]:In recent years, food quality and safety incidents occur frequently all over the world, and China's food quality and safety field is facing major challenges. On the one hand, compared with consumers and government regulators, food enterprises have information advantages about products, and many enterprises seek illegal profits in this way; at the same time, the problem of information asymmetry also exists. The practice in many developed countries and regions has proved that the food traceability system with complete production information recording and disclosure function can effectively improve the food supply. Quality and safety level, but in our country started late and construction is not perfect.
From the point of view of the whole food supply chain, this paper takes qualitative and quantitative research methods to explore the key factors affecting the establishment of food traceability system in the supply chain and puts forward countermeasures and suggestions.
Firstly, the existing research results are summarized and analyzed in the form of literature review from the concepts and contents of food traceability system, its functions and related subjects.
Secondly, by modeling a three-tier supply chain system consisting of several homogeneous food raw material suppliers, a food manufacturer and a consumer, the paper demonstrates the impact of traceability on the food quality and safety level of upstream and downstream node enterprises in the food supply chain and the whole supply chain, and quantitatively analyzes the food traceability. The necessity of establishing the system in the supply chain.
Thirdly, on the basis of evolutionary game theory, a two-echelon supply chain model is constructed, which consists of two groups: the raw material supplier of upstream node enterprises and the manufacturer and processor of downstream node enterprises. The key factors affecting the establishment of food traceability system in the supply chain are obtained.
Finally, on the basis of a comprehensive analysis of the current situation and difficulties of the establishment and implementation of food traceability system in China, and combined with the conclusions of the model, the countermeasures and suggestions for the establishment and implementation of food traceability system in the supply chain are put forward.
