【摘要】：正學(xué)校推(實)行后勤社會化后,德州市學(xué)校餐飲業(yè)出現(xiàn)了大批的個體經(jīng)營戶。為加強對個體經(jīng)營承包商餐飲用具(以下稱"食具")的消毒監(jiān)督,筆者于2003年初引用HACCP系統(tǒng)對德州市學(xué)校餐飲業(yè)食具消毒進行了管理,現(xiàn)報道如下。1 對象與方法1.1 對象 德州市區(qū)22所學(xué)校的食堂及小吃部共計61家。1.2 方法 采用現(xiàn)場衛(wèi)生學(xué)調(diào)查的方法,對學(xué)校餐飲業(yè)戶的衛(wèi)生許可證及健康證的持證情況、食具消毒間及設(shè)施、保潔櫥的配置情況、消毒制度的制定情況、消毒員相關(guān)知識水平、消毒
[Abstract]:After the socialization of school logistics, a large number of self-employed households appeared in the school catering industry in Dezhou. In order to strengthen the supervision over the disinfection of catering utensils (hereinafter referred to as "food utensils") by self-employed contractors, the author used HACCP system to manage the disinfection of food utensils in the school catering industry of Dezhou City at the beginning of 2003. In this paper, we report the following 1.1 objects and methods: a total of 61 .1.2 canteens and snack bars in 22 schools in downtown Texas adopted the method of on-site hygiene investigation to obtain hygiene permits and health certificates from school restaurants.
