【摘要】：目的了解廈門市學(xué)校食堂餐飲具消毒效果及其影響因素,為加強(qiáng)學(xué)校食堂衛(wèi)生監(jiān)督管理提供依據(jù)。方法采用大腸菌群快速檢測(cè)紙片法對(duì)廈門市2007-2010年部分學(xué)校食堂2 840份餐飲具的消毒效果進(jìn)行監(jiān)測(cè),使用SPSS 11.5對(duì)資料進(jìn)行統(tǒng)計(jì)分析。結(jié)果廈門市學(xué)校食堂2007-2010年餐飲具總合格率為79.1%。4 a間消毒合格率呈逐年上升趨勢(shì),差異有統(tǒng)計(jì)學(xué)意義(χ2=49.549,P0.01);不同季節(jié)、不同類別學(xué)校餐飲具消毒效果差異均有統(tǒng)計(jì)學(xué)意義(P值均0.01)。結(jié)論廈門市應(yīng)加大對(duì)學(xué)校食堂的消毒監(jiān)管和指導(dǎo)力度,全面提高餐飲具消毒衛(wèi)生質(zhì)量。
[Abstract]:Objective to understand the disinfection effect of dining utensils in school canteens of Xiamen and its influencing factors. In order to provide the basis for strengthening the hygienic supervision and management of school canteens, the method of rapid detection of coliform bacteria was used to detect some school canteens in Xiamen from 2007 to 2010. The disinfection effect of 840 food utensils was monitored. SPSS 11.5 was used to analyze the data. Results the total qualified rate of dining utensils in Xiamen school canteen from 2007 to 2010 was 79.1.4. A the eligible rate of disinfection increased year by year. The difference was statistically significant (蠂 2, 49.549, P 0.01). In different seasons, there were significant differences in disinfection effect of different kinds of school dining utensils (P < 0.01). Conclusion Xiamen should strengthen the supervision and guidance on disinfection of school canteens. To improve the disinfection and hygiene quality of food and beverage utensils.
