【摘要】:澳大利亞肉類標(biāo)準(zhǔn)(meat standards Australia,MSA)是一個肉類全面質(zhì)量管理系統(tǒng),旨在為消費(fèi)者提供一個肉類食用品質(zhì)的準(zhǔn)確描述。MSA已經(jīng)通過對消費(fèi)者進(jìn)行大規(guī)模的品嘗實驗,確定了牛肉供應(yīng)鏈中影響牛肉可口性的生產(chǎn)、屠宰、加工和價值以及各個生產(chǎn)環(huán)節(jié)的關(guān)鍵控制點(diǎn)(critical control points,CCPs)評分。這些關(guān)鍵控制點(diǎn)評分通過兩種方式管理牛肉的可口性。首先,屠宰加工領(lǐng)域的關(guān)鍵控制點(diǎn)一直作為胴體評分的強(qiáng)制性標(biāo)準(zhǔn);其次,其他生產(chǎn)和加工領(lǐng)域的關(guān)鍵點(diǎn)控制評分被合并到一個模型當(dāng)中,用來預(yù)測不同個體肌肉和烹飪技巧的可口性。MSA模型可以用來支持新的營銷創(chuàng)新。已經(jīng)有充分的證據(jù)表明,消費(fèi)者愿意為優(yōu)質(zhì)牛肉付出高價。目前已出現(xiàn)幾個零售的例子采用MSA可口性評分來給牛肉定價。這樣胴體價值的計算方法即為每塊零售肉質(zhì)量乘以不同質(zhì)量評分的價格,并按照零售價的比例支付牛肉生產(chǎn)者。該系統(tǒng)可以用不同的胴體性狀相關(guān)的經(jīng)濟(jì)權(quán)重來計算。由于等級是基于持續(xù)的質(zhì)量規(guī)模,生產(chǎn)者在這個系統(tǒng)中的質(zhì)量和產(chǎn)量方面即便小有增加,也會獲得相應(yīng)的經(jīng)濟(jì)回報。MSA系統(tǒng)已經(jīng)支撐了一個新的和創(chuàng)新的營銷系統(tǒng),該系統(tǒng)的定價是透明的,可以幫助生產(chǎn)者對肉品的質(zhì)量和產(chǎn)量的調(diào)整作出明智的決定。MSA系統(tǒng)不僅在澳大利亞有效地用于預(yù)測牛肉的可口性,而且在其他國家也都證明了其應(yīng)用的有效性。在歐洲啟動的ProSafeBeef項目也表明,歐洲也可用類似MSA的系統(tǒng)進(jìn)行肉類的分級。
[Abstract]:Meat standards Australia MSAA is a total meat quality management system designed to provide consumers with an accurate description of meat quality. MSA has conducted large-scale taste experiments on consumers. The critical control points (CCPs) score of the beef supply chain was determined for the production, slaughtering, processing and value of beef in the supply chain. These critical control point scores manage beef palatability in two ways. First, the critical control points in the slaughtering and processing field have been used as mandatory criteria for carcass scoring; secondly, the critical point control scores in other production and processing fields have been incorporated into a single model. The delicious. MSA model used to predict individual muscle and cooking skills can be used to support new marketing innovations. There is ample evidence that consumers are willing to pay high prices for premium beef. There have been several examples of retail using the MSA Taste score to price beef. Thus the carcass value is calculated by multiplying the quality of each piece of retail meat by the price of different quality scores and paying the beef producer in proportion to the retail price. The system can be calculated using different economic weights related to carcass traits. Because the grade is based on continuous quality scale, even if there is a small increase in the quality and output of the system, producers will receive a corresponding economic return. MSA system has supported a new and innovative marketing system. The system's pricing is transparent and can help producers make informed decisions about meat quality and production adjustments. And it has proved effective in other countries. The ProSafeBeef program, launched in Europe, also shows that MSA-like systems are also available for meat classification in Europe.
