【摘要】：目的了解不同供餐模式下特勤療養(yǎng)員膳食營養(yǎng)攝入情況,為探索適合療養(yǎng)院推廣的供餐模式提供參考。方法以南京軍區(qū)杭州療養(yǎng)院直屬院區(qū)(配餐模式)及海勤療區(qū)(自助餐模式)的特勤人員為對象,采用稱重法進(jìn)行為期3d的膳食調(diào)查,同時采用軍人食物定量、軍人營養(yǎng)素供給量標(biāo)準(zhǔn)評價膳食營養(yǎng)中存在的問題。結(jié)果與自助餐模式相比,除糧食、蔗糖外,配餐模式下所有食物的剩余率均明顯減少(P0.05);自助餐模式下脂肪供能比例偏高、碳水化合物供能比例偏低,配餐模式下三大產(chǎn)能營養(yǎng)素供能比例基本符合軍標(biāo)要求,二者相比差異有顯著性(P0.05);自助餐模式下,植物油和膽固醇的攝入明顯超標(biāo),分別為192.6%和178.3%,配餐模式下,二者的達(dá)標(biāo)率分別為90.3%和99.8%,減少明顯(P0.05);自助餐模式下,維生素A、維生素B_1、維生素B_2和鈣攝入不足,配餐模式下,維生素A和維生素B_2攝入不足,但與自助餐模式相比,維生素A、維生素B_1、維生素B_2和鈣的攝入量增加明顯(P0.05)。結(jié)論與配餐模式相比,自助餐模式更易出現(xiàn)營養(yǎng)不合理,浪費(fèi)更多,因此,應(yīng)對自助餐進(jìn)行科學(xué)有效的營養(yǎng)膳食管理,并探索適合療養(yǎng)院推廣的合理有效的供餐模式和管理方法。
[Abstract]:Objective to investigate the dietary nutritional intake of special infirmaries under different feeding modes, and to provide reference for exploring a suitable feeding model for infirmary. Methods the special duty personnel of Hangzhou sanatoriums of Nanjing military region were investigated by weighing method for 3 days, and the food quantity of soldiers was measured. Problems in evaluating Dietary Nutrition by military nutrient supply Standard. Results compared with the buffet model, the surplus rate of all foods was significantly decreased except for grain and sucrose (P0.05), the proportion of fat and carbohydrate energy was higher and carbohydrate energy supply was lower in buffet mode. The ratio of energy supply of the three major productive nutrients was basically in line with the requirements of military standard (P0.05). In buffet mode, the intake of vegetable oil and cholesterol was significantly higher than the standard (192.6% and 178.3%, respectively), and the difference between them was significant (P0.05). In the buffet mode, vitamin A, vitamin B1, vitamin B2 and calcium were not enough, and in the food matching mode, the intake of vitamin A and vitamin B2 was insufficient, but compared with the buffet mode, the ratio of vitamin A and vitamin B2 decreased significantly (P0.05). Vitamin A, vitamin B 1, vitamin B 2 and calcium intake increased significantly (P0.05). Conclusion compared with the feeding pattern, the buffet model is more prone to unreasonable nutrition and more waste. Therefore, scientific and effective nutritional diet management should be carried out. To explore a reasonable and effective feeding mode and management method suitable for the promotion of sanatorium.
