無錫地區(qū)人乳脂肪脂肪酸組成及sn-2位脂肪酸分布

【摘要】:采集無錫地區(qū)150例人乳樣品,提取乳中脂肪后,采用氣相色譜法對(duì)人乳脂肪中總脂肪酸及sn-2位脂肪酸進(jìn)行測(cè)定。結(jié)果表明:人乳脂肪總脂肪酸中飽和脂肪酸含量較低,主要為棕櫚酸,不飽和脂肪酸含量較高,主要為油酸和亞油酸。隨著泌乳期的延長(zhǎng),中碳鏈飽和脂肪酸(C8∶0、C10∶0、C12∶0)及單不飽和脂肪酸(C16∶1)含量逐漸增加,而部分長(zhǎng)碳鏈飽和脂肪酸及長(zhǎng)碳鏈多不飽和脂肪酸如二十碳五烯酸(EPA)、二十二碳六烯酸(DHA)含量明顯下降。人乳脂肪中sn-2位脂肪酸組成中飽和脂肪酸含量約為70%,主要為棕櫚酸。
[Abstract]:Total fatty acids and sn-2 position fatty acids in human milk fat were determined by gas chromatography after extracting fat from human milk in Wuxi area. The results showed that the content of saturated fatty acids in total fatty acids of human milk fat was lower, mainly palmitic acid, unsaturated fatty acids were higher, mainly oleic acid and linoleic acid. With the prolongation of lactation period, the contents of medium carbon chain saturated fatty acids (C8, C10, C12) and monounsaturated fatty acids (C16) increased gradually. However, some long-chain saturated fatty acids and long-chain polyunsaturated fatty acids such as eicosapentaenoic acid (EPA), 22 (DHA) decreased significantly. The content of saturated fatty acids in human milk fat is about 70%, mainly palmitic acid.
