富含γ-氨基丁酸食品的研究進(jìn)展

【摘要】:γ-氨基丁酸(gamma-aminobutyric acid,GABA)是哺乳動(dòng)物中樞神經(jīng)系統(tǒng)主要的抑制性神經(jīng)遞質(zhì),并具有調(diào)節(jié)血壓與心率、調(diào)節(jié)情緒、抗焦慮、抗抑郁、抗腫瘤、保肝護(hù)腎、調(diào)節(jié)激素分泌等生理功能。目前主要通過厭氧等技術(shù)處理植物原料、微生物發(fā)酵以及外源添加的方式加工富含GABA的食品,涉及富含GABA的茶葉、糧食、豆類制品、乳制品、糖果、飲料等食品的研究、專利及部分產(chǎn)品,但產(chǎn)品較少,今后需加強(qiáng)產(chǎn)業(yè)化。
[Abstract]:Gamma-aminobutyric acid (gamma-aminobutyric acid,GABA) is the main inhibitory neurotransmitter in mammalian central nervous system and has the functions of regulating blood pressure and heart rate, regulating mood, antianxiety, antidepressant, anti-tumor, protecting liver and protecting kidney. Regulate hormone secretion and other physiological functions. At present, plant raw materials, microbial fermentation and exogenous supplementation are mainly processed by anaerobic techniques to process foods rich in GABA, including tea, grain, bean products, dairy products, confectionery, beverages, etc., which are rich in GABA. Patent and partial product, but product is less, need to strengthen industrialization henceforth.
