【摘要】：目的探討我國市場上主要預(yù)包裝食品中脂肪的含量分布狀況,為評估居民膳食脂肪來源和攝入水平、指導(dǎo)居民合理膳食提供依據(jù)。方法通過調(diào)查市場上預(yù)包裝食品營養(yǎng)標(biāo)簽,記錄和分析了3754條預(yù)包裝食品脂肪含量數(shù)據(jù),對各類食品逐級分類進(jìn)行脂肪含量統(tǒng)計,獲得中位數(shù)及四分位數(shù)。結(jié)果在各類預(yù)包裝食品中,除植物油、奶油外,堅果種子類(45.7 g/100 g)、沙拉醬/蛋黃醬(37.3 g/100 g)、巧克力及制品(34.7 g/100 g)、膨化食品(25.2 g/100 g)、餅干(24.0 g/100 g)、腌臘肉制品(21.8 g/100 g)、糕點(diǎn)/甜點(diǎn)(21.6 g/100g)、方便面(21.0 g/100 g)以及起酥面包(19.0 g/100 g)等食品,由于其原料、配方和加工工藝等原因,脂肪含量相對較高。結(jié)論我國不同類別預(yù)包裝食品脂肪含量分布范圍廣,部分預(yù)包裝食品脂肪含量較高,需注意控制攝入量。
[Abstract]:Objective to study the distribution of fat in the main prepackaged foods in China, and to provide the basis for evaluating the source and intake of dietary fat and guiding the reasonable diet of the residents. Methods the data of 3754 prepackaged foods were recorded and analyzed by investigating the nutrition labels of prepackaged foods in the market. The median and quartile of fat contents were obtained by classifying and classifying all kinds of foods step by step. Results in all kinds of prepackaged foods, in addition to vegetable oil and cream, nuts seeds (45.7 g / 100 g), salad dressing / mayonnaise) (37.3 g / 100 g), chocolates and products (34.7 g / 100 g),) Expanded foods (25.2g / 100 g),) (24.0 g / 100 g), salted bacon) (21.8 g / 100 g), pastry / dessert (21.6 g / 100g), Foods such as instant noodles (21.0 g / 100 g) and crisp bread (19.0 g / 100 g) have relatively high fat content due to their raw materials, formula and processing technology. Conclusion different kinds of prepackaged foods in China have a wide range of fat distribution, and some prepackaged foods have a high fat content, so it is necessary to control the intake.
