基于不同養(yǎng)老模式的長沙市老年人膳食結(jié)構(gòu)比較

【摘要】:目的對不同養(yǎng)老模式下長沙市老年人膳食結(jié)構(gòu)進行調(diào)查,為改善老年人生活質(zhì)量以及制定相應(yīng)的營養(yǎng)干預(yù)措施提供科學(xué)依據(jù)。方法采用隨機抽樣方法,在長沙市隨機抽取3所公辦福利院、3所民辦養(yǎng)老院和3個社區(qū),共計443名60歲以上老年人參與問卷調(diào)查。采用食物頻率法(FFQ)以及3 d 24 h膳食回顧法調(diào)查老年人飲食消費模式、飲食習(xí)慣等。結(jié)果在老年人的膳食結(jié)構(gòu)中,社區(qū)老年人的油脂和食鹽的實際攝入量明顯高于《中國居民膳食指南》中推薦攝入量,分別是其1.41倍、2.1倍;而公辦福利院以及民辦養(yǎng)老院老年人每日攝入油脂、食鹽的量符合《指南》中推薦油脂≤25 g、食鹽≤6 g的標(biāo)準(zhǔn)。相比老年人能量攝入標(biāo)準(zhǔn)而言,社區(qū)老人平均攝入的能量相對較高;從攝入食物構(gòu)成中得出,男性攝入動物性食品比例比女性高(P0.05),而女性攝入植物性食品比例比男性高(P0.05)。結(jié)論老年人魚蝦類、奶制品類、豆制品類等食物每日攝入量普遍偏低,存在膳食結(jié)構(gòu)不合理情況。需加強對老年人的營養(yǎng)教育,促進老人平衡膳食,預(yù)防慢性疾病的發(fā)生,改善老年人營養(yǎng)狀況。
[Abstract]:Objective to investigate the dietary structure of the elderly in Changsha under different pension models, so as to provide scientific basis for improving the quality of life of the elderly and making corresponding nutritional intervention measures. Methods A total of 443 elderly people over 60 years old were selected from 3 private nursing homes and 3 communities in Changsha City by random sampling. The dietary consumption patterns and dietary habits of the elderly were investigated by food frequency method (FFQ) and 3 days and 24 h dietary review. Results in the dietary structure of the elderly, the actual intake of fat and salt of the elderly in the community was significantly higher than the recommended intake in the Dietary Guide of Chinese residents, which was 1.41 times and 2.1 times respectively.
