食品中金黃色葡萄球菌檢出率及腸毒素與耐藥性分析

【摘要】:目的研究溫州市龍灣區(qū)6類食品中金黃色葡萄球菌污染狀況及產(chǎn)腸毒素特性與耐藥性,為防止金黃色葡萄球菌引起的食物中毒及為臨床用藥提供依據(jù)。方法按照《食品微生物學(xué)檢驗(yàn)》(GB 4789.1—2010)對(duì)樣品進(jìn)行金黃色葡萄球菌檢測(cè),分離出的菌株用PCR法分析腸毒素基因(SEA~SEE),同時(shí)用VITEK2 Compact進(jìn)行藥敏試驗(yàn)。結(jié)果在540份食品樣品中分離出金黃色葡萄球菌31株,檢出率為5.74%,其中肉與肉制品和餐飲食品中檢出率較高,分別為11.25%和6.88%。對(duì)31株金黃色葡萄球菌進(jìn)行腸毒素PCR基因檢測(cè),檢出12株產(chǎn)腸毒素菌株,占38.71%;10株攜帶SEA,其中2株同時(shí)攜帶SEC,2株攜帶SEB。31株金黃色葡萄球菌對(duì)氨芐西林、青霉素、紅霉素和頭孢西丁的耐藥率為90.32%、87.10%、48.39%和48.39%,并表現(xiàn)出多種耐藥譜。結(jié)論食品中存在金黃色葡萄球菌污染,尤其在肉與肉制品和餐飲食品中較嚴(yán)重;檢出產(chǎn)腸毒素金黃色葡萄球菌的比例較高,應(yīng)引起足夠重視;食品中金黃色葡萄球菌對(duì)多種藥物耐藥,臨床治療應(yīng)選擇敏感藥物。
[Abstract]:Objective to study Staphylococcus aureus contamination, enterotoxin production and drug resistance in 6 kinds of foods in Longwan District, Wenzhou City, so as to prevent food poisoning caused by Staphylococcus aureus and provide evidence for clinical use of drugs. Methods Staphylococcus aureus was detected according to "Food Microbiology Test" (GB4789.1-2010). The isolated strains were analyzed by PCR method for enterotoxin gene SEAA SEE, and VITEK2 Compact was used for drug sensitivity test. Results 31 strains of Staphylococcus aureus were isolated from 540 food samples, the detectable rate was 5.74%, and the detection rate of meat and meat products and food and beverage was higher (11.25% and 6.88%, respectively). The enterotoxin PCR gene of 31 strains of Staphylococcus aureus was detected and 12 enterotoxigenic strains were detected, accounting for 38.71% of them, 10 strains carried SEA.2 strains of Staphylococcus aureus carrying SEB.31 strain, 2 strains of Staphylococcus aureus carrying Staphylococcus aureus and penicillin. The drug resistance rates of erythromycin and cefxitin were 90.327.107.104.39% and 48.39% respectively. Conclusion Staphylococcus aureus contamination exists in food, especially in meat and meat products and food products, and the proportion of enterotoxin producing Staphylococcus aureus is high, which should be paid more attention to. Staphylococcus aureus is resistant to many kinds of drugs in food, so sensitive drugs should be selected for clinical treatment.
