淮安地區(qū)小龍蝦及其外環(huán)境中致病菌分布規(guī)律和耐藥性分析

【摘要】:目的了解淮安地區(qū)生鮮小龍蝦及其外環(huán)境中致病菌的分布規(guī)律以及相關(guān)菌株的耐藥性,為食源性疾病的防控提供依據(jù)。方法根據(jù)食品微生物檢測(cè)國(guó)家標(biāo)準(zhǔn),檢測(cè)70份小龍蝦樣品(養(yǎng)殖環(huán)節(jié)30份、銷(xiāo)售環(huán)節(jié)40份)和40份外環(huán)境水體樣本(養(yǎng)殖環(huán)節(jié)15份、銷(xiāo)售環(huán)節(jié)25份)中的沙門(mén)氏菌、金黃色葡萄球菌、單核細(xì)胞增生李斯特氏菌、大腸埃希菌O157和副溶血性弧菌,并對(duì)沙門(mén)氏菌進(jìn)行血清型鑒定,然后用紙片擴(kuò)散法測(cè)定沙門(mén)氏菌和金黃色葡萄球菌的耐藥性。結(jié)果小龍蝦中致病菌的總檢出率為41.43%,致病菌類(lèi)型包括沙門(mén)氏菌、金黃色葡萄球菌、副溶血性弧菌和單核細(xì)胞增生李斯特菌。外壞境水體中致病菌的總檢出率為22.50%,致病菌類(lèi)型包括沙門(mén)氏菌、金黃色葡萄球菌和副溶血性弧菌。沙門(mén)氏菌分離株主要對(duì)萘啶酸和氨芐西林具有較強(qiáng)的耐藥性;金黃色葡萄球菌分離株則對(duì)紅霉素、甲氧芐氨嘧啶/磺胺甲(?)唑和克林霉素具有較強(qiáng)的耐藥性。結(jié)論淮安地區(qū)小龍蝦及其外環(huán)境水體中存在致病菌污染,并且沙門(mén)氏菌和金黃色葡萄球菌分離菌株的耐藥情況嚴(yán)重。
[Abstract]:Objective to investigate the distribution of pathogenic bacteria in fresh crayfish and its external environment and the drug resistance of related strains in Huai'an area, so as to provide evidence for the prevention and control of foodborne diseases. Methods 70 samples of crayfish (30 in culturing and 40 in sales) and 40 samples of environmental water (15 in culturing and 25 in sales) were detected according to the national standards of food microbiological examination. Staphylococcus aureus, Listeria monocytogenes, Escherichia coli O157 and Vibrio parahaemolyticus were identified. Results the total detection rate of pathogenic bacteria in crayfish was 41.43. The pathogens included Salmonella, Staphylococcus aureus, Vibrio parahaemolyticus and Listeria monocytogenes. The total detection rate of pathogenic bacteria was 22.50. The types of pathogens included Salmonella, Staphylococcus aureus and Vibrio parahaemolyticus. Salmonella isolates were mainly resistant to naphthalic acid and ampicillin, while Staphylococcus aureus isolates were resistant to erythromycin, trimethoprim / sulfamethylammonium. Azole and clindamycin have strong drug resistance. Conclusion there is contamination of pathogenic bacteria in the water of crayfish and its environment in Huaian area, and the drug resistance of Salmonella and Staphylococcus aureus isolates is serious.
