【摘要】：強化食品是WHO推薦的改善人群微量營養(yǎng)素缺乏的有效手段之一,大多數(shù)國家采取強制性強化和(或)自愿性強化的方式,并結(jié)合適宜的食品強化項目來提高人群微量營養(yǎng)素的攝入水平。歐洲、美洲、澳大利亞和中國等諸多研究已表明強化食品在提高各自人群的微量營養(yǎng)素攝入水平方面發(fā)揮了重要作用,但是目前尚缺乏針對國內(nèi)外相關(guān)研究的全面系統(tǒng)的總結(jié)。為了明確強化食品對人群重點微量營養(yǎng)素的貢獻率,為強化原則的修訂和強化量的風險評估提供數(shù)據(jù),本文就國內(nèi)外強化食品的貢獻率和改善作用的相關(guān)研究進行綜述。
[Abstract]:Fortified foods are one of the effective ways to improve micronutrient deficiencies recommended by the WHO. Most countries adopt mandatory and / or voluntary fortification. Combined with appropriate food fortification program to improve the population micronutrient intake level. European, American, Australian and Chinese studies have shown that fortified foods play an important role in improving micronutrient intake in their respective populations, but there is still a lack of a comprehensive and systematic summary of relevant studies at home and abroad. In order to clarify the contribution rate of fortified food to key micronutrients in population and to provide data for the revision of fortified principles and the risk assessment of fortified amount, this paper reviews the related studies on the contribution rate and improving effect of fortified food at home and abroad.
