【摘要】：沙門菌(Salmonella)是最常見的食源性致病菌,對人類的健康造成重大威脅。近年來,食品中沙門菌檢測與鑒定技術(shù)不斷發(fā)展和完善,從最初的傳統(tǒng)分離培養(yǎng)法到免疫學(xué)方法,以及最新的分子生物學(xué)方法都不斷得到更新。本文綜述各類食品中沙門菌的檢測新技術(shù),為更好地了解食品沙門菌檢測方法奠定基礎(chǔ),同時提高食品安全水平,更有效地保障人類健康。
[Abstract]:Salmonella is the most common foodborne pathogen, which poses a great threat to human health.In recent years, the detection and identification technology of Salmonella in food has been continuously developed and improved, from the original traditional isolation and culture methods to immunological methods, as well as the latest molecular biological methods have been constantly updated.In this paper, the new detection technology of Salmonella in various kinds of food is reviewed in order to lay a foundation for better understanding of the detection method of salmonella in food, at the same time to improve the level of food safety and to ensure human health more effectively.
