【摘要】：目的了解重慶市大中小學(xué)及幼兒園統(tǒng)一供應(yīng)學(xué)生餐的微生物污染狀況,為進(jìn)一步確保學(xué)生餐安全健康提供依據(jù)。方法依據(jù)《2014年國(guó)家食品污染物和有害因素風(fēng)險(xiǎn)監(jiān)測(cè)工作手冊(cè)》對(duì)樣品進(jìn)行衛(wèi)生指標(biāo)菌和食源性致病菌檢測(cè)。結(jié)果衛(wèi)生指標(biāo)菌中的菌落總數(shù)和大腸埃希菌計(jì)數(shù)不合格率分別為19.57%,6.09%;食源性致病菌中的沙門菌檢測(cè)全部合格,不合格率最高的是金黃色葡萄球菌計(jì)數(shù),為1.74%。學(xué)校類型里中學(xué)和小學(xué)樣品不合格率最高,達(dá)到34.88%和33.33%。不同食品類別學(xué)生餐中涼拌菜和焙烤油炸類不合格率最高,為54.55%和44.44%。炎熱季節(jié)的學(xué)生餐不合格率為31.25%,涼爽季節(jié)為16.28%,差異有統(tǒng)計(jì)學(xué)意義(χ2=3.45,P0.01)。城市學(xué)校學(xué)生餐樣品不合格率為26.82%,稍高于農(nóng)村學(xué)校。早餐和午餐不合格率分別是27.91%,23.67%,差異無(wú)統(tǒng)計(jì)學(xué)意義(χ2=1.08,P0.05)。結(jié)論 2015年重慶市學(xué)校學(xué)生餐存在不同程度的微生物污染風(fēng)險(xiǎn)。應(yīng)根據(jù)監(jiān)測(cè)結(jié)果反映的食品安全風(fēng)險(xiǎn)進(jìn)一步加強(qiáng)衛(wèi)生監(jiān)管。
[Abstract]:Objective to investigate the microorganism pollution in the uniform feeding of students in universities, primary and middle schools and kindergartens in Chongqing. In order to provide the basis for ensuring the students' food safety and health, the hygienic index bacteria and foodborne pathogenic bacteria were detected according to the National Handbook on risk Monitoring of Food contaminants and harmful factors of 2014. The total number of bacteria in the standard bacteria and the unqualified rate of Escherichia coli count were 19.57% 6.09, respectively, and the total number of salmonella in foodborne pathogenic bacteria were all up to standard. The highest unqualified rate was Staphylococcus aureus, which was 1.74. The highest unqualified rate was found in high school and primary school samples, reaching 34.88% and 33.33.The unqualified rates of colouring vegetables and baked fried foods were the highest in different food types of students' meals. The unqualified rate of student meal in hot season was 31.25, and that in cool season was 16.28. The difference was statistically significant (蠂 ~ 2 ~ 2 ~ (3.45) ~ (5) P ~ (0.01)). The unqualified rate of students' meal in urban school was 26.82, which was slightly higher than that in rural school. The unqualified rate of breakfast and lunch was 27.9123.67, respectively. Conclusion in 2015, there was a risk of microbial contamination in school meals in Chongqing, and health supervision should be further strengthened according to the food safety risk reflected by the monitoring results.
