【摘要】:【目的】系統(tǒng)測定云南常見野生牛肝菌中總Hg含量,分析不同產(chǎn)地、種類及不同部位牛肝菌對Hg的富集規(guī)律和積累特征,評價野生牛肝菌的食用安全性,為野生食用菌產(chǎn)業(yè)的發(fā)展和食用安全評估提供數(shù)據(jù)依據(jù)!痉椒ā坎捎肕A-2000直接測Hg儀—冷原子吸收光譜法測定牛肝菌菌蓋、菌柄中總Hg含量,計算同一牛肝菌菌蓋與菌柄總Hg含量比(QC/S),分析不同種類、部位牛肝菌中總Hg含量的差異和富集規(guī)律。根據(jù)中國《食品安全國家標準食品中污染物限量》(GB 2762—2012)規(guī)定的食用菌中Hg限量標準及聯(lián)合國糧農(nóng)組織和世界衛(wèi)生組織(FAO/WHO)規(guī)定的每周Hg允許攝入量(provisional tolerable weekly intake,PTWI)現(xiàn)行標準,評價云南野生牛肝菌的食用安全性!窘Y果】同一子實體菌蓋與菌柄的比值(QC/S)在0.3~8.8之間,95%牛肝菌樣品菌蓋、菌柄總Hg含量比(QC/S)≥1,表明多數(shù)牛肝菌菌蓋對Hg的富集能力強于菌柄。本研究中多數(shù)野生牛肝菌菌蓋、菌柄總Hg含量超過GB 2762—2012規(guī)定的食用菌中Hg含量限量標準(≤0.1 mg/kg);根據(jù)PTWI標準,假設成年人(60 kg)每周食用300 g新鮮牛肝菌,則多數(shù)樣品Hg攝入量低于允許攝入量,無安全風險,而2013年采自玉溪大營街的美味牛肝菌,2012年采自楚雄永仁縣的銅色牛肝菌及2014年采自玉溪新平的絨柄牛肝菌等少數(shù)樣品Hg攝入量高于該標準!窘Y論】不同產(chǎn)地、種類牛肝菌菌蓋、菌柄中總Hg含量存在明顯差異,有少數(shù)牛肝菌總Hg含量超過相關標準,食用具有一定的潛在風險。
[Abstract]:[objective] to determine the content of total Hg in common wild Boletus in Yunnan, analyze the accumulation law and accumulation characteristics of boletus from different producing areas, species and different parts, and evaluate the edible safety of wild boletus. To provide data basis for the development of wild edible fungi industry and the evaluation of edible safety. [methods] the total Hg content in the cap and stalk of Boletus was determined by MA-2000 and cold atomic absorption spectrometry. The ratio of total Hg content of the same boletus cap to stalk was calculated and the different species were analyzed. The difference and enrichment Law of Total Hg content in Boletus sp.
