【摘要】：近年來,全球很多國家和地區(qū)農產品質量,特別是畜禽產品質量安全問題日益嚴重,引發(fā)國內外廣泛的關注,同樣由于畜禽產品的質量安全問題,嚴重制約和影響我國畜牧業(yè)的蓬勃發(fā)展。危害分析與關鍵控制點(HACCP),目的在于保證從食品到食用的過程中(生產、加工、制造、準備和食用)的安全。該體系以科學、合理和系統(tǒng)的方法,識別、評價及控制危害。在畜牧生產中建立HACCP體系,首先要對畜牧生產過程中各個環(huán)節(jié)(畜禽育種、繁殖、飼養(yǎng)、管理、疾病防控、畜產品加工、畜牧經營等)進行危害分析,找出可能存在的潛在危險,以制訂HACCP計劃。
[Abstract]:In recent years, the quality of agricultural products in many countries and regions around the world, especially the quality and safety of livestock and poultry products, has become increasingly serious, which has aroused widespread concern at home and abroad, also due to the quality and safety of livestock and poultry products. Seriously restrict and affect the vigorous development of animal husbandry in China. Hazard Analysis and critical Control Point (HACCP),) aims to ensure safety from food to food (production, processing, manufacturing, preparation and consumption). The system identifies, evaluates and controls hazards in a scientific, rational and systematic manner. In order to establish HACCP system in livestock production, first of all, it is necessary to carry out hazard analysis on all aspects (breeding, raising, management, disease prevention and control, processing of livestock products, animal husbandry management, etc.) in the process of livestock production. Identify potential hazards for HACCP planning.
