【摘要】：近年來(lái),全球很多國(guó)家和地區(qū)農(nóng)產(chǎn)品質(zhì)量,特別是畜禽產(chǎn)品質(zhì)量安全問(wèn)題日益嚴(yán)重,引發(fā)國(guó)內(nèi)外廣泛的關(guān)注,同樣由于畜禽產(chǎn)品的質(zhì)量安全問(wèn)題,嚴(yán)重制約和影響我國(guó)畜牧業(yè)的蓬勃發(fā)展。危害分析與關(guān)鍵控制點(diǎn)(HACCP),目的在于保證從食品到食用的過(guò)程中(生產(chǎn)、加工、制造、準(zhǔn)備和食用)的安全。該體系以科學(xué)、合理和系統(tǒng)的方法,識(shí)別、評(píng)價(jià)及控制危害。在畜牧生產(chǎn)中建立HACCP體系,首先要對(duì)畜牧生產(chǎn)過(guò)程中各個(gè)環(huán)節(jié)(畜禽育種、繁殖、飼養(yǎng)、管理、疾病防控、畜產(chǎn)品加工、畜牧經(jīng)營(yíng)等)進(jìn)行危害分析,找出可能存在的潛在危險(xiǎn),以制訂HACCP計(jì)劃。
[Abstract]:In recent years, the quality of agricultural products in many countries and regions around the world, especially the quality and safety of livestock and poultry products, has become increasingly serious, which has aroused widespread concern at home and abroad, also due to the quality and safety of livestock and poultry products. Seriously restrict and affect the vigorous development of animal husbandry in China. Hazard Analysis and critical Control Point (HACCP),) aims to ensure safety from food to food (production, processing, manufacturing, preparation and consumption). The system identifies, evaluates and controls hazards in a scientific, rational and systematic manner. In order to establish HACCP system in livestock production, first of all, it is necessary to carry out hazard analysis on all aspects (breeding, raising, management, disease prevention and control, processing of livestock products, animal husbandry management, etc.) in the process of livestock production. Identify potential hazards for HACCP planning.
