【摘要】：本研究旨在探究湘西黑豬肌肉蛋白質(zhì)營養(yǎng)價(jià)值,為其今后深加工提供理論依據(jù)�；谇叭藢ο嫖骱谪i新鮮肌肉氨基酸含量的測定結(jié)果,采用氨基酸比值系數(shù)分(SRC)、氨基酸評分(AAS)、氨基酸比值系數(shù)(RC)及必需氨基酸指數(shù)(EAAI)等評價(jià)指標(biāo)對湘西黑豬肌肉蛋白質(zhì)氨基酸模式進(jìn)行評價(jià),并計(jì)算肌肉生長的氨基酸模式。結(jié)果表明:脫脂湘西黑豬肌肉中總氨基酸含量高達(dá)97.93%;所含的人體必需氨基酸之和占總氨基酸的質(zhì)量比(E/T)為37.81%,人體必需氨基酸總量與人體非必需氨基酸總量的質(zhì)量比(E/N)為60.12%;鮮味、甜味和芳香類氨基酸的含量分別29.52%、13.52%和5.65%,風(fēng)味氨基酸總含量為47.69%,支鏈氨基酸(纈氨酸、亮氨酸和異亮氨酸)的總含量高達(dá)20.71%。比值系數(shù)分(SRC)為72.60,必需氨基酸指數(shù)58.24;幾種人體必需氨基酸中,第一限制氨基酸為蛋氨酸+胱氨酸(Met+Cys),第二限制性氨基酸為蘇氨酸。結(jié)論:湘西黑豬肌肉必需氨基酸種類齊全,且比例相對均衡,第一限制性氨基酸為纈氨酸,生產(chǎn)實(shí)踐中應(yīng)注意添加。
[Abstract]:The purpose of this study was to investigate the nutritional value of protein in the muscle of Xiangxi black pig, and to provide theoretical basis for further processing. Based on the results of the determination of amino acid content in fresh muscle of Xiangxi black pig, The amino acid pattern of muscle protein in Xiangxi Black Pig was evaluated by using amino acid ratio coefficient (SRC), amino acid score (AASA), amino acid ratio coefficient (ACA) and essential amino acid index (EAAII). The results showed that the total amino acid content in the muscle of non-fat Xiangxi black pig was as high as 97.93, and the ratio of essential amino acids to total amino acids was 37.81 and the total amount of essential amino acids in human body was 37.81. The mass ratio of the total amount of non-essential amino acids to the human body is 60.12%. The contents of sweet amino acids and aromatic amino acids were 29.52% and 5.65%, respectively. The total content of flavor amino acids was 47.69. The total content of leucine and isoleucine is as high as 20.71.The ratio coefficient is 72.60, and the essential amino acid index is 58.24. The first limiting amino acid is methionine cystine and the second is threonine. Conclusion: the essential amino acids in the muscles of Xiangxi black pigs are complete, and the proportion is relatively balanced, and the first restricted amino acid is valine. Attention should be paid to addition in production practice.
