【摘要】:食品安全問(wèn)題受到世界各國(guó)的關(guān)注,隨著新食物產(chǎn)品的不斷開發(fā)研究,關(guān)于是否會(huì)增加人體致敏風(fēng)險(xiǎn)等問(wèn)題成為眾專家學(xué)者競(jìng)相爭(zhēng)論的焦點(diǎn),嚙齒類動(dòng)物模型以其特有的優(yōu)勢(shì)在食物致敏性評(píng)價(jià)中占有重要位置,本文例舉了BN大鼠、Balb/c小鼠、C3H/HeJ小鼠此三類最具代表性的嚙齒類動(dòng)物模型,并對(duì)致敏過(guò)程中常見致敏原及其影響因素、致敏途徑和體內(nèi)檢測(cè)指標(biāo)作一綜述,為食品致敏性評(píng)價(jià)提供參考。
[Abstract]:The problem of food safety has attracted the attention of all countries in the world. With the continuous development and research of new food products, the issue of whether it will increase the risk of human sensitization has become the focus of debate among the experts and scholars. The rodent model occupies an important position in the evaluation of food sensitivities with its unique advantages. This article exemplifies the BN rat, Balb/c Mice and C3H/HeJ mice are the three most representative rodent models. The common sensitivities and their influencing factors in the sensitization process, the sensitization pathway and the detection indexes in the body are reviewed to provide a reference for the evaluation of food sensitivities.
