《舌尖上的中國(guó)》飲食文化編碼研究

【摘要】:在當(dāng)前綜合國(guó)力極大提升、人們生活水平極快發(fā)展、信息傳播極速膨脹的社會(huì)背景下,人們?cè)絹碓阶非笪镔|(zhì)文化和精神文化的文明性和多樣性。食物是人類生產(chǎn)和生活的根本,飲食文化乃中國(guó)傳統(tǒng)文化中最具特色的部分之一,中國(guó)文化要想走向世界被國(guó)際所認(rèn)知,美食是一個(gè)很好的窗口和平臺(tái)!渡嗉馍系闹袊(guó)》以中華民族的美食文化作為載體,通過記錄片的方式架構(gòu)了傳者和受者之間關(guān)于飲食文化編碼和飲食文化認(rèn)同的橋梁。中國(guó)作為地大物博、歷史悠久的文明大國(guó),通過電視媒體向世界人民傳播傳統(tǒng)飲食文化的作品并不多見,,2012年5月,一部以中國(guó)傳統(tǒng)和現(xiàn)代飲食文化為背景的紀(jì)錄片《舌尖上的中國(guó)》在央視播出之后,引起了強(qiáng)烈反響,各種“舌尖體”走紅網(wǎng)絡(luò)。它在中國(guó)飲食文化的制作和呈現(xiàn)上,不僅給我們上了一堂輕松而有意的課程,讓我們看到了中國(guó)文化的博大精深,更是給中國(guó)電視的文化傳播事業(yè)帶來了相應(yīng)的啟示和借鑒,所以本文以中國(guó)飲食文化為題對(duì)其進(jìn)行研究,并得出啟示。 紀(jì)錄片《舌尖上的中國(guó)》取得的成功是顯而易見的,不僅闡釋了中國(guó)的文化價(jià)值尤其是非物質(zhì)文化遺產(chǎn)的價(jià)值傳承,更是得到了受眾的認(rèn)可。本文以英國(guó)的文化研究學(xué)者斯圖爾特·霍爾的編碼/解碼理論對(duì)《舌尖上的中國(guó)》個(gè)案進(jìn)行研究,并用該理論對(duì)中國(guó)飲食文化元素在片中的呈現(xiàn)進(jìn)行深入分析。另外將該片進(jìn)行飲食文化編碼的成效和問題進(jìn)行概述,對(duì)中國(guó)文化對(duì)外傳播得出了一定啟示和意義。文化傳播理論是支撐電視文化傳播的重要理論,本文從受眾如何對(duì)飲食文化的認(rèn)同進(jìn)行分析完成了文化編碼和解碼的全過程。
[Abstract]:Under the social background of great improvement of comprehensive national strength, rapid development of people's living standard and extremely rapid expansion of information dissemination, people are increasingly pursuing the civilization and diversity of material culture and spiritual culture. Food is the basis of human production and life. Food culture is one of the most distinctive parts of Chinese traditional culture. If Chinese culture wants to move towards the world, it will be recognized by the international community. Food is a good window and platform. "China on the tongue" takes the Chinese food culture as the carrier and constructs the bridge between the communicator and the recipient about the coding and identity of the food culture through the way of documentaries. As a large and rich country with a long history of civilization, it is rare for China to disseminate traditional food culture to the people of the world through the television media. In May 2012, A documentary, "China on the tongue", which is based on Chinese traditional and modern food culture, has aroused a strong response after it was broadcast on CCTV, and various "tip of the tongue" have become popular on the Internet. In the production and presentation of Chinese food culture, it not only gives us a relaxed and intentional course, but also gives us a broad and profound view of Chinese culture, and also brings corresponding enlightenment and reference to the cultural communication cause of Chinese television. Therefore, this paper studies Chinese diet culture, and draws inspiration. The success of documentary "China on the tongue" is obvious. It not only explains the cultural value of China, especially the value inheritance of intangible cultural heritage, but also gets the approval of the audience. In this paper, a case study of "China on the tip of the tongue" is carried out on the basis of Stuart Hall's coding / decoding theory, and the presentation of Chinese dietary cultural elements in the film is deeply analyzed by the theory. In addition, the paper summarizes the effects and problems of Chinese food culture coding, and draws some enlightenment and significance for the spread of Chinese culture to the outside world. The theory of cultural communication is an important theory to support the cultural communication of television. This paper completes the whole process of cultural coding and decoding from the perspective of audience's identification with food culture.
