高阻隔性抗氧化抗菌食品包裝紙的研制

【摘要】:本課題選用植物源的活性成分作為抗菌劑和防腐劑,將其浸漬或涂布于阻隔性優(yōu)良的抄造原紙,制備天然抗氧化抗菌食品包裝紙,以滿足當(dāng)今食品市場(chǎng)綠色安全的要求。選取茶葉和厚樸為實(shí)驗(yàn)用植物源,采用超聲波輔助浸提的方法提取植物中活性成分,并分別對(duì)其進(jìn)行抗菌性能和抗氧化性能檢測(cè)。實(shí)驗(yàn)發(fā)現(xiàn),在料液比1:10,乙醇濃度75%,超聲時(shí)間30min,超聲溫度70℃的提取條件下,茶葉提取物對(duì)供試菌(金黃色葡萄球菌、大腸桿菌、沙門氏菌和枯草桿菌)的抑菌圈直徑最大,抑菌性能最好,最小抑菌濃度為25μL/mL,此時(shí)清除一半DPPH自由基的用量(IC50)為2.203μL/mL;在料液比1:10,乙醇濃度90%,超聲時(shí)間40min,超聲溫度65℃的提取條件下,厚樸提取物的抑菌效果最好,最小抑菌濃度為8.125 μL/mL,IC50值為15.477μL/mL.茶葉提取物比厚樸提取物的抑菌性能弱,二者對(duì)DPPH的清除率均優(yōu)于市售的食品防腐劑TBHQ,具有研究?jī)r(jià)值。高效液相色譜法對(duì)提取物進(jìn)行成分分析。茶葉提取物的有效成分為茶多酚,其主體成分為兒茶素,單體組成主要包括表兒茶素(EC)、沒食子兒茶素(GC)、表沒食子兒茶素(EGC)、表兒茶素沒食子酸酯(ECG)、表沒食子兒茶素沒食子酸酉(EGCG):厚樸提取物的有效成分為厚樸酚和和厚樸酚。采用福林酚法對(duì)提取物進(jìn)行定量分析,通過沒食子酸回歸曲線可算得茶葉中茶多酚提取率為11.9%,厚樸中總酚的提取率為47.4%。紙張抄造,通過提高打漿度來改善紙張的機(jī)械性能和阻隔性能,實(shí)驗(yàn)抄造所得紙張定量為56.60g/m2,耐破指數(shù)5.45kPa.m2/g,縱橫平均抗張指數(shù)161.13N·m/g,透氣度2.65×10-4μm/Pa·s,滿足國(guó)標(biāo)對(duì)食品包裝紙的性能要求。采用浸漬和表面涂布方式,將20%的水溶性聚乙烯醇(PVA)與厚樸提取物進(jìn)行復(fù)配制紙,將制得的功能紙用于奶酪的包裝。在同一儲(chǔ)存條件下,比較抄造原紙、提取物浸漬PVA涂布紙、提取物/PVA涂布紙這三種紙張包裝對(duì)奶酪的質(zhì)量影響。實(shí)驗(yàn)得出,提取物/PVA涂布紙對(duì)奶酪的包裝效果最好,利用動(dòng)力學(xué)方程預(yù)測(cè)其貨架壽命為136天。
[Abstract]:In this paper, the active ingredients of plant source are selected as antimicrobial agents and preservatives, which are impregnated or coated on good barrier base paper to prepare natural antioxidation and antibacterial food wrapping paper to meet the requirements of green and safe food market.Tea and Magnolia officinalis were selected as experimental plant sources.
