感官評(píng)價(jià)和GC-MS結(jié)合偏最小二乘回歸法分析甜橙油中的風(fēng)味物質(zhì)

【摘要】:以4種產(chǎn)地的甜橙油為研究對(duì)象,對(duì)甜橙油樣品做感官評(píng)價(jià),利用GC-MS對(duì)甜橙油樣品中的揮發(fā)性化合物進(jìn)行定性、定量分析。利用偏最小二乘回歸法對(duì)感官評(píng)價(jià)與GC-MS的結(jié)果做相關(guān)性分析,結(jié)果顯示,甜橙油中的揮發(fā)性化合物己醛、檸檬烯、β-水芹烯、α-水芹烯、反羅勒烯、辛醛、芳樟醇、β-金合歡烯、(Z)-檸檬醛、香葉烯、紫蘇醛、橙花醇、香葉醇、紫蘇醇、斯巴醇與感官屬性呈較好的相關(guān)性。通過相關(guān)性分析確定甜橙油的風(fēng)味物質(zhì)。
[Abstract]:The samples of sweet orange oil from four producing areas were studied. The volatile compounds in sweet orange oil samples were qualitatively and quantitatively analyzed by GC-MS. The correlation between sensory evaluation and GC-MS results was analyzed by partial least square regression. The results showed that the volatile compounds hexaldehyde, limonene, 尾 -water cress, 偽 -water celerene, anti-basil, octanaldehyde, linalool in sweet orange oil were determined. 尾 -, (Z)-citral, germane, perilla aldehyde, hesperol, geraniol, perilla alcohol, spa alcohol were well correlated with sensory properties. The flavor substance of sweet orange oil was determined by correlation analysis.
