傅里葉變換紅外光譜法測定油脂碘價的方法研究

【摘要】:提出將石英比色皿用于油脂碘價(IV)的傅里葉紅外變換光譜法(FTIR)測定的方法。油脂四氯化碳溶液的FTIR譜圖中,油脂分子中碳碳雙鍵上的C—H在3 010 cm-1附近有特征吸收峰,該峰峰高A和樣品質(zhì)量濃度c的比值A(chǔ)/c與油脂IV間存在良好線性關(guān)系。利用椰子油和亞麻籽油按一定比例配制的油脂標(biāo)準(zhǔn)樣品,建立了IV測定的標(biāo)準(zhǔn)曲線:A/c=2.026 2×IV-30.37,R2=0.999 5。10種不同油脂樣品的碘價測定結(jié)果顯示,所建方法測定的碘價(IVIR)與國家標(biāo)準(zhǔn)方法(IVGB)的結(jié)果一致,二者相關(guān)關(guān)系為IVIR=1.004×IVGB-1.39,R2=0.997 8,表明該方法可以用于食用油碘價的快速測定。
[Abstract]:A method for the determination of iodide valence (IV) by Fourier transform infrared spectroscopy (FTIR) with quartz colorimetric dish is presented. In the FTIR spectra of carbon tetrachloride solution, C-H on carbon and carbon double bond in oil molecule has characteristic absorption peak near 3 010 cm-1. There is a good linear relationship between the ratio A / c of the peak height A and sample concentration c and the IV of oil. The standard curve of IV was established by using the standard sample of coconut oil and flaxseed oil prepared in certain proportion. The iodine valence of A/c=2.026 2 脳 IV-30.37,R2=0.999 5.10 kinds of different oil samples was determined. The determination of iodine valence (IVIR) by this method is consistent with that of the national standard method (IVGB). The correlation between the two methods is IVIR=1.004 脳 IVGB-1.39,R2=0.997 8, which indicates that this method can be used for the rapid determination of iodine valence in edible oil.
