食品用防油紙中有害物的遷移分析

【摘要】:食品包裝防油紙是一種用于防止食品中油脂透過的紙張。而防油紙中含有的全氟辛酸為其主要的有害物質(zhì),全氟化合物是一種新型的持久性污染物,毒理學(xué)研究證明,此類物質(zhì)具有導(dǎo)致器官損傷、神經(jīng)行為缺陷、生殖發(fā)育障礙、脂代謝紊亂以及各種激素分泌失調(diào)等多種癥狀的毒性。防油紙中的全氟辛酸存在遷移到油脂類食品的可能性,給人們身體健康帶來(lái)危害。本文采用氣相色譜質(zhì)譜聯(lián)用技術(shù)(GC-MS)檢測(cè)防油紙中全氟辛酸的殘留以及遷移量。首先通過對(duì)比固相萃取、液-液萃取、超聲提取、索式提取和加速溶劑萃取幾種樣品提取方法確定了選用超聲提取法,并通過對(duì)比確定了提取溶劑、提取溫度。然后進(jìn)行衍生化方式的確定,最終確定衍生溫度為60℃,衍生時(shí)間為60分鐘,并在衍生過程中加入氫氧化鈉溶液。之后,優(yōu)化儀器參數(shù),確定用內(nèi)標(biāo)法進(jìn)行定量,檢測(cè)幾種防油紙樣品中的全氟辛酸殘留。涂布防油紙,檢測(cè)其防油等級(jí),并分別檢測(cè)其全氟辛酸的殘留。選擇一種等級(jí)的涂布防油紙,測(cè)量其在不同溫度下向油脂類食品模擬物的遷移水平,并做出它的遷移模型。結(jié)果表明,測(cè)得兩種普通防油紙樣品中全氟辛酸含量分別為0.6μg/kg和1.86μg/kg,爆米花桶樣品中全氟辛酸含量為2.02μg/kg,燒烤油紙和漢堡紙及小吃包裝紙袋中沒有檢測(cè)到全氟辛酸。對(duì)涂布防油紙進(jìn)行殘留檢測(cè),防油等級(jí)為6級(jí)的防油紙全氟辛酸的含量為0.0091μg/cm2,防油等級(jí)為7級(jí)的防油紙全氟辛酸的含量為0.0241μg/cm2,防油等級(jí)為8級(jí)的防油紙全氟辛酸的含量為0.0281μg/cm2,均沒有超過國(guó)家對(duì)于全氟添加劑使用國(guó)家標(biāo)準(zhǔn)中的限值。對(duì)于含氟涂層防油紙,隨著防油等級(jí)的增高,其所含全氟辛酸的量也增加的更多。對(duì)涂布防油紙進(jìn)行遷移實(shí)驗(yàn),在20℃時(shí),全氟辛酸的遷移量為0.0140μg/cm2-0.0275μg/cm2;在70℃時(shí),全氟辛酸的遷移量為0.0093 μg/cm2-0.0213μg/cm2; 在 121℃時(shí),全氟辛酸的遷移量為0.0039μg/cm2-0.0232μg/cm2。借助軟件對(duì)實(shí)驗(yàn)數(shù)據(jù)進(jìn)行回歸分析,證明在20℃時(shí),全氟辛酸向橄欖油中的遷移規(guī)律符合Boltzmann;在70℃時(shí),全氟辛酸向橄欖油中的遷移規(guī)律符合指數(shù)函數(shù)。
