【摘要】:清代是我國(guó)歷史上最后一個(gè)封建王朝,它繼承前朝并推動(dòng)了封建社會(huì)在政治、經(jīng)濟(jì)、文化上最后的高速發(fā)展。與此同時(shí),清代也把中國(guó)古代飲食文化進(jìn)行總結(jié)與提升,使得宮廷帝后的飲食達(dá)到了歷代宮廷飲食的巔峰。本論文根據(jù)史料及晚清回憶錄,利用現(xiàn)代醫(yī)學(xué)及營(yíng)養(yǎng)學(xué)知識(shí),總結(jié)清代宮廷飲食的得失。全文分為清代宮廷飲食概述、宮廷飲食之得、宮廷飲食之失、形成清代宮廷飲食的決定因素、結(jié)語(yǔ)共五部分。主要研究對(duì)象為清代宮廷皇室統(tǒng)治成員飲食的特點(diǎn),試圖通過(guò)現(xiàn)代醫(yī)學(xué)及營(yíng)養(yǎng)學(xué)角度分析皇室成員日常膳食攝入食物的優(yōu)點(diǎn)與不足,并通過(guò)清宮醫(yī)案記載來(lái)剖析由于不同統(tǒng)治者的飲食偏好所導(dǎo)致的不同身體健康狀況,找到他們長(zhǎng)壽或疾病的原因。仔細(xì)分析清代的宮廷飲食,可以發(fā)現(xiàn)一對(duì)矛盾。一方面,宮廷飲食具有奶制品攝入充足,雜糧豆類攝入多樣,飲食講求“因時(shí)而食,果蔬為充”等飲食優(yōu)點(diǎn)。帝王力圖通過(guò)飲食這一手段使自身更加健康、長(zhǎng)久地掌控天下最高的統(tǒng)治權(quán)。但另一方面,宮廷日常膳食還存在長(zhǎng)期攝入高糖、高熱量食品,大量食用高蛋白、高脂肪、高膽固醇的肉類食品,經(jīng)常食用久置糧食等錯(cuò)誤的飲食習(xí)慣,這又成為歷朝帝后產(chǎn)生疾病的原因之一。通過(guò)分析宮廷飲食“得失”的現(xiàn)象,可以發(fā)現(xiàn)形成宮廷膳食的三點(diǎn)決定性因素,即民族傳統(tǒng)的延續(xù)、禮儀制度的約束以及統(tǒng)治地位所決定。我們當(dāng)代人處在民主法治與市場(chǎng)經(jīng)濟(jì)的大環(huán)境下,行為習(xí)慣已經(jīng)不必再受封建禮制與民族傳統(tǒng)的制約。我國(guó)居民飲食觀念目前正在逐步走向健康,但仍有些人延續(xù)過(guò)去錯(cuò)誤的、不健康的飲食習(xí)慣,從而導(dǎo)致各類亞健康及慢性病問(wèn)題的出現(xiàn)。本文討論清代宮廷飲食得失,是為了讓今人重視飲食營(yíng)養(yǎng)與身體健康的關(guān)系。我們應(yīng)從清代宮廷飲食的得失之中取其精華,去其糟粕,引導(dǎo)當(dāng)代人形成符合現(xiàn)代醫(yī)學(xué)所推薦的健康正確的膳食觀念。通過(guò)日常平衡多樣的飲食習(xí)慣提高和改善我們身體營(yíng)養(yǎng)狀況與健康水平,在飲食上實(shí)現(xiàn)“無(wú)病防病,有病注意”這一目的。
[Abstract]:The Qing Dynasty was the last feudal dynasty in the history of China. It inherited the former Dynasty and promoted the last rapid development of feudal society in politics, economy and culture. The Qing Dynasty also summarized and promoted the ancient Chinese diet culture, which made the diet of the imperial court reached the peak of the past dynasties. According to the historical data and the memoirs of the late Qing Dynasty, this paper made use of modern medicine and nutrition knowledge. Summarize the gains and losses of the Qing court diet. The full text is divided into the Qing Dynasty court diet overview, the court diet, the palace diet loss, the formation Qing Dynasty court diet determinant factor. The conclusion consists of five parts. The main object of this study is the characteristics of the diet of the members of the imperial rule of the Qing Dynasty, and attempts to analyze the advantages and disadvantages of the daily dietary intake of the members of the royal family through the perspective of modern medicine and nutrition. And through the records of Qing palace medical records to analyze the different health conditions caused by different rulers' dietary preferences, to find out the reasons for their longevity or disease. You can find a pair of contradictions. On the one hand, the court diet with adequate intake of dairy products, food and beans intake diversity, diet stress "eat sometimes." The emperors tried to make themselves healthier by eating and controlling the highest ruling power in the world for a long time. But on the other hand, the daily diet of the court also had a long-term intake of high sugar. High calorie food, a large amount of high protein, high fat, high cholesterol meat food, often eat long home food and other wrong eating habits. Through the analysis of the phenomenon of "gain and loss" of the court diet, we can find the three decisive factors of the formation of the court diet, that is, the continuation of the national tradition. The restraint of etiquette system and its dominant position. Our contemporary people are in the environment of democracy, rule of law and market economy. Behavior habits no longer need to be restricted by feudal etiquette and national traditions. The concept of diet of Chinese residents is gradually moving towards health, but there are still some people continue the wrong, unhealthy eating habits in the past. Thus leading to the emergence of various sub-health and chronic diseases. This paper discusses the gain and loss of the court diet in the Qing Dynasty. In order to make people pay attention to the relationship between dietary nutrition and physical health, we should take the essence of the Qing court diet and discard its dross from the gains and losses of the court diet in the Qing Dynasty. To guide modern people to form a healthy and correct diet concept in line with modern medicine. To improve and improve the nutritional status and health level of our body through daily balanced and diversified eating habits. In the diet to achieve the "disease prevention, sick attention" this purpose.
