【摘要】：中國(guó)牛奶業(yè)產(chǎn)生于19世紀(jì)70年代至20世紀(jì)初。在晚清的這一時(shí)期,國(guó)內(nèi)牛奶商戶不斷涌現(xiàn),專門乳用品種牛不斷引進(jìn),牛奶產(chǎn)銷兩旺,已經(jīng)形成了牛奶的產(chǎn)、供、銷產(chǎn)業(yè)鏈。但牛奶生產(chǎn)的規(guī)模不大,技術(shù)和設(shè)備落后,沒(méi)有掌握罐裝牛奶的技術(shù),加工上市的牛奶品種有限,不能生產(chǎn)奶粉和煉乳,不具備與外國(guó)牛奶業(yè)競(jìng)爭(zhēng)的實(shí)力。外國(guó)牛奶在中國(guó)市場(chǎng)很注重廣告營(yíng)銷,銷售量不斷增長(zhǎng)。這一時(shí)期中國(guó)牛奶業(yè)存在兩大質(zhì)量問(wèn)題,一是牛奶摻水現(xiàn)象很嚴(yán)重,二是病牛照舊擠奶。但這些問(wèn)題的嚴(yán)重性、危害性遠(yuǎn)不及當(dāng)時(shí)的歐美牛奶業(yè)。
[Abstract]:China's dairy industry originated from 1870s to early 20th century. During the period of the late Qing Dynasty, domestic milk merchants continued to emerge, special dairy products and cattle were continuously introduced, milk production and sales were flourishing, and milk production and supply had been formed. But the scale of milk production is not large, the technology and equipment are backward, the technology of canned milk is not mastered, the varieties of milk processed and marketed are limited, and the milk powder and condensed milk can not be produced. Foreign milk in the Chinese market attaches great importance to advertising and marketing, and the sales volume continues to grow. During this period, there are two major quality problems in the Chinese dairy industry, one is that the phenomenon of milk adulteration is very serious. Second, sick cattle milking as usual, but these problems are far less serious than the European and American dairy industry at that time.
