【摘要】:企業(yè)餐飲供應(yīng)系統(tǒng)負(fù)責(zé)企業(yè)所有員工的餐飲供應(yīng)服務(wù)和保障工作,是企業(yè)后勤系統(tǒng)的一個(gè)重要組成部分,它的有效運(yùn)作關(guān)系到企業(yè)的經(jīng)營(yíng)與發(fā)展,因此,本篇文章企業(yè)餐飲本篇文章圍繞企業(yè)餐飲供應(yīng)系統(tǒng),研究了兩個(gè)問(wèn)題:1)企業(yè)餐飲供應(yīng)系統(tǒng)在企業(yè)系統(tǒng)的地位與作用問(wèn)題;2)企業(yè)餐飲供應(yīng)系統(tǒng)運(yùn)作模式現(xiàn)狀與模式選擇的具體條件問(wèn)題。本文以供應(yīng)鏈管理、后勤管理、運(yùn)營(yíng)管理等理論為基礎(chǔ),應(yīng)用系統(tǒng)分析、定量比較分析、數(shù)學(xué)建模等研究方法,圍繞企業(yè)餐飲供應(yīng)系統(tǒng),主要工作內(nèi)容以及成果如下:首先,通過(guò)企業(yè)系統(tǒng)、企業(yè)后勤系統(tǒng)和餐飲供應(yīng)系統(tǒng)的分析,證明企業(yè)餐飲供應(yīng)系統(tǒng)在企業(yè)系統(tǒng)中具有重要的地位與作用,即企業(yè)餐飲供應(yīng)系統(tǒng)是企業(yè)系統(tǒng)中的關(guān)鍵要素,對(duì)企業(yè)系統(tǒng)正常和有效地運(yùn)行具有保障作用,對(duì)企業(yè)未來(lái)發(fā)展具有保障和促進(jìn)作用。其次,從系統(tǒng)要素、構(gòu)成結(jié)構(gòu)以及運(yùn)行流程三個(gè)方面對(duì)企業(yè)餐飲供應(yīng)系統(tǒng)兩種運(yùn)作模式進(jìn)行了介紹和比較分析,得到了兩點(diǎn)結(jié)論,第一,在系統(tǒng)復(fù)雜程度方面,第二種運(yùn)作模式比第一種運(yùn)作模式復(fù)雜。第二,在食材運(yùn)輸調(diào)配的復(fù)雜程度、企業(yè)生產(chǎn)加工效率、企業(yè)生產(chǎn)加工成本、菜品供應(yīng)速度、企業(yè)對(duì)供應(yīng)商合作關(guān)系管理復(fù)雜程度以及企業(yè)人力物力資源節(jié)約方面,第二種運(yùn)作模式比第一種運(yùn)作模式具有優(yōu)勢(shì)。最后,基于兩種運(yùn)作模式的系統(tǒng)參與主體的目標(biāo)成本建模和比較分析,得出不同主體基于目標(biāo)成本進(jìn)行模式選擇決策過(guò)程與結(jié)果的影響因素為不同模式的采購(gòu)與儲(chǔ)存固定成本、每種食材的年庫(kù)存持有成本、平均缺貨數(shù)量、單位缺貨成本、需求滿足率等。
[Abstract]:The enterprise catering supply system is responsible for the catering service and guarantee work of all employees of the enterprise. It is an important part of the enterprise logistics system. Its effective operation is related to the management and development of the enterprise. This article revolves around the enterprise catering supply system, This paper studies two questions: (1) the status and function of enterprise catering supply system in enterprise system (2) the present situation of the operation mode of enterprise catering supply system and the specific conditions of mode selection. Based on the theories of supply chain management, logistics management and operation management, this paper applies the research methods of system analysis, quantitative comparative analysis, mathematical modeling and so on. The main work contents and results are as follows: first of all, Through the analysis of enterprise system, enterprise logistics system and catering supply system, it is proved that the enterprise catering supply system plays an important role in the enterprise system, that is, the enterprise catering supply system is the key element in the enterprise system. It can guarantee the normal and effective operation of the enterprise system and promote the future development of the enterprise. Secondly, from three aspects of system elements, structure and operation process, this paper introduces and compares the two operation modes of enterprise catering supply system, and draws two conclusions: first, in terms of the complexity of the system, The second mode of operation is more complex than the first. Second, in terms of the complexity of the transportation and deployment of food materials, the production and processing efficiency of enterprises, the production and processing costs of enterprises, the speed of food supply, the complexity of the management of cooperative relations between enterprises and suppliers, and the saving of human and material resources of enterprises, The second mode of operation has advantages over the first mode of operation. Finally, the target cost modeling and comparative analysis of the system participants based on the two operation modes show that the factors influencing the decision-making process and the results of the mode selection based on the target cost are the fixed cost of purchase and storage in different modes. Annual inventory holding cost, average shortage quantity, unit stock cost, demand satisfaction rate, etc.
