2種不同品系中華鱉的營養(yǎng)成分分析與比較
[Abstract]:The contents of water, crude protein, crude fat, ash, mineral elements, amino acids and fatty acids in male and female muscles of Trionyx sinensis (Trionyx sinensis) and Japanese strain of Trionyx sinensis (Trionyx sinensis) were studied. The results were as follows: 1) the crude protein contents of female and male muscles of Qingxi and Chinese soft-shelled turtle lines were 18.46%, 17.25%, 19.17%, 18.83%, 21.00%, 22.31%, 24.89%, 20.07%, respectively, and their skirt edges were 21.00%, 22.31%, 24.89%, 20.07%, respectively. The crude fat contents of the muscles of the two species were 1.07%, 0.96%, 1.17%, 1.05%, 0.23%, 0.32%, 0.30%, 0.27%, respectively, and their skirt edges were 0.23%, 0.32%, 0.30% and 0.27%, respectively. 2) the essential amino acid index of male and female muscles of Qingxi and Chinese soft-shelled turtle strains were 93.92, 92.52, 91.89 and 93.12, respectively, indicating that the two species of soft-shelled turtle were rich in muscle nutrition and were good protein sources. The ratio of essential amino acid to amino acid in muscle was 37.10%, 36.67%, 36.48%, 36.76%, respectively. The ratio of essential amino acid / amino acid in skirt was 17.74%, 19.73%, 17.80%, 17.81%, respectively. 3) the polyunsaturated fatty acids in the muscles of Qingxi and Chinese soft-shelled turtle were rich, and the content of eicosapentaenoic acid 22 carbon hexaenoic acid was 14.98%, 13.97%, 16.20%, 19.22%, respectively. The content of eicosapentaenoic acid 22 carbon hexaenoic acid in the muscle of Japanese strain of Trionyx sinensis was about 3% higher than that of Qingxi Trionyx sinensis.
