6種常見(jiàn)食用蜻蜓稚蟲(chóng)含油率與脂肪酸組成分析

【摘要】:為評(píng)價(jià)6種云南和貴州地區(qū)常見(jiàn)食用蜻蜓稚蟲(chóng)油脂的營(yíng)養(yǎng)價(jià)值,采用索氏提取法和GC-MS分析和比較了閃藍(lán)麗大蜻、碧偉蜓、小團(tuán)扇春蜓、黃蜻、大團(tuán)扇春蜓、赤褐灰蜻6種蜻蜓稚蟲(chóng)的含油率和油脂脂肪酸組成。結(jié)果表明:6種蜻蜓稚蟲(chóng)含油率為5.72%~11.90%,其中大團(tuán)扇春蜓的含油率最高,赤褐灰蜻的最低。6種蜻蜓稚蟲(chóng)油脂分別鑒定出18~29種脂肪酸,其中包括奇數(shù)碳脂肪酸、二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)等具有特殊功能的脂肪酸;不飽和脂肪酸(UFA)占脂肪酸總量的61.50%~65.22%,多不飽和脂肪酸(PUFA)占UFA總量的29.57%~50.00%,棕櫚酸相對(duì)含量最高,為17.57%~24.61%;n-6 PUFA與n-3 PUFA比值為0.68~1.30,接近淡水魚(yú)類,黃蜻和赤褐灰蜻的飽和脂肪酸(SFA)、單不飽和脂肪酸(MUFA)和PUFA的含量之比分別為1.17∶1.2∶1和1.3∶1.18∶1,接近北大西洋公約組織和美國(guó)心臟協(xié)會(huì)推薦的人體攝入比(1∶1.5∶1和(0.8~1)∶1.5∶1)。
[Abstract]:In order to evaluate the nutritive value of oil and fat of 6 common edible larvae of dragonfly in Yunnan and Guizhou regions, Soxhlet extraction method and GC-MS were used to analyze and compare the oil content of Odonata grandiflorus, Vigna biginifera, Cymophora fargesii, yellow dragonfly and Dendrophylla macrocephala. Oil content and fatty acid composition of 6 species of dragonfly larvae. The results showed that the oil content of 6 species of young dragonfly was 5.72% and 11.90%, among which the oil content was the highest among them, and 1829 kinds of fatty acids, including odd carbon fatty acids, were identified from the lowest 6 species of oil of dragonfly, the lowest of 6 species of dragonfly in red brown dragonfly. Eicosapentaenoic acid (EPA) and 22 carbohexaenoic acid (DHA) have special function fatty acids, unsaturated fatty acids (UFAs) account for 65.22% of the total fatty acids, polyunsaturated fatty acids (PUFAs) account for 29.57% of the total UFAs, palmitic acid is the highest. The ratio of 17.57% to 24.61% of n-6 PUFA to n-3 PUFA was 0.68 ~ 1.30, which was close to freshwater fish, The ratios of saturated fatty acids (SFA), monounsaturated fatty acids (MUFA) and PUFA were 1.17: 1.2: 1 and 1.3: 1.18: 1, respectively, which were close to those recommended by the North Atlantic Treaty Organization (NATO) and the American Heart Association (1). 1. 1: 1 and (0. 8: 1): 1.
