陜西省8類市售食品中防腐劑和甜味劑的檢測結(jié)果與分析

【摘要】:目的了解陜西省市售食品中防腐劑和甜味劑的使用情況,為今后食品添加劑的風險評估提供科學依據(jù)。方法采集陜西省十個地市范圍的市售食品,用氣相色譜法和高效液相色譜法檢測苯甲酸、山梨酸、甜蜜素、糖精鈉和安賽蜜。結(jié)果共抽檢樣品763份,其中334份樣品檢測防腐劑,總合格率為99.4%,合格率分別為:豆與豆制品(100%)、肉與肉制品(99.0%)、街頭流動餐飲(98.7%);三類食品只檢出山梨酸超標,肉與肉制品的山梨酸最大檢出值是國標限量的5.7倍。429份樣品檢測甜味劑,總合格率為95.8%,合格率分別為:膨化食品(100%)、飲料類(95.3%)、餐飲食品(94.7%)、冷凍飲品(92.0%)、果凍布丁(88.2%);餐飲食品的甜蜜素最大檢出值是國標限量的4.6倍。結(jié)論陜西省市售的8類食品中添加山梨酸和甜蜜素現(xiàn)象普遍,相關(guān)部門應加強執(zhí)法抽查力度,加強企業(yè)自律意識,提高食品質(zhì)量。
[Abstract]:Objective to understand the use of preservatives and sweeteners in foods sold in Shaanxi Province, and to provide scientific basis for risk assessment of food additives in the future. Methods the foods sold in ten cities in Shaanxi Province were collected. Benzoic acid, sorbic acid, cyclamate, saccharin sodium and Ansai honey were determined by gas chromatography and high performance liquid chromatography. Results A total of 763 samples were sampled and 334 samples were tested for preservatives. The total qualified rate was 99.4%. The qualified rates were: bean and bean products 100, meat and meat products 99.0 and street food 98.70.Sorbic acid was only detected in three kinds of foods. The maximum detectable value of sorbic acid in meat and meat products was 5.7 times of the national standard limit. 429 samples were used to detect sweeteners. The total qualified rate was 95.80.The qualified rate was 100% for expanded food, 95.3C for beverage, 94.7m for food and beverage, 92.0m for frozen drink, 88.2D for jelly pudding, and 4.6 times that of national standard. Conclusion the phenomenon of adding sorbic acid and cyclamate to 8 kinds of foods on the market in Shaanxi Province is common. The relevant departments should strengthen the law enforcement and spot check strengthen the self-discipline consciousness of enterprises and improve the quality of food.
