大理市市售蔬菜硝酸鹽及亞硝酸鹽污染現(xiàn)狀分析

【摘要】:目的通過對大理市市售蔬菜硝酸鹽及亞硝酸鹽的含量進(jìn)行檢測和分析,為蔬菜的食用安全提供科學(xué)依據(jù)。方法采用食品安全檢測儀對大理市市區(qū)3大菜市場8類20種蔬菜中的硝酸鹽和亞硝酸鹽含量進(jìn)行測定,并對結(jié)果進(jìn)行分析。結(jié)果 8類蔬菜亞硝酸鹽含量高低順序?yàn)槿~菜類根菜類花菜類茄果類莖菜類瓜菜類豆類蔥蒜類,經(jīng)方差分析,葉菜類與根菜類、花菜類及莖菜類亞硝酸鹽含量之間無統(tǒng)計(jì)學(xué)意義(P0.05),但與其他幾類蔬菜間均有統(tǒng)計(jì)學(xué)意義(P0.05),其中與蔥蒜類(P=0.002)及瓜菜類(P=0.007)的差異達(dá)到極顯著水平。市售蔬菜硝酸鹽污染情況輕度、中度、重度、嚴(yán)重污染率分別為75%、7.5%、8.75%、8.75%。結(jié)論大理市市售蔬菜硝酸鹽、亞硝酸鹽污染情況較為嚴(yán)峻,葉菜類蔬菜含量最高;不同菜市場污染情況不同,新橋菜市場亞硝酸鹽污染嚴(yán)重,而燈籠菜市場硝酸鹽污染嚴(yán)重。
[Abstract]:Objective to provide scientific basis for edible safety of vegetables by detecting and analyzing nitrate and nitrite contents in vegetables sold in Dali city. Methods the contents of nitrate and nitrite in 20 kinds of vegetables of 8 kinds in 3 major vegetable markets in Dali city were determined by food safety detector, and the results were analyzed. Results the order of nitrite content in 8 kinds of vegetables was leaf vegetables, root vegetables, cauliflower, eggplant, fruit, stem, melon, vegetables, beans, onion, garlic, etc. There was no significant difference in nitrite content between cauliflower and stem vegetables, but there was a significant difference between them with other vegetables, including onion and garlic (P0. 002) and melon and vegetable (P0. 007). The nitrate pollution of vegetables sold on the market was mild, moderate and severe, and the serious pollution rate was 757.5and 8.75 / 8.75 respectively. Conclusion the pollution of nitrate and nitrite in vegetables sold in Dali city is serious, the content of leafy vegetables is the highest, the pollution situation of different vegetable markets is different, the pollution of nitrite in Xinqiao vegetable market is serious, and the nitrate pollution in lantern vegetable market is serious.
