武漢市動(dòng)物性食品中雙酚A的污染現(xiàn)狀調(diào)查及人群暴露風(fēng)險(xiǎn)評(píng)估

【摘要】:目的:檢測(cè)武漢市區(qū)居民經(jīng)常食用的動(dòng)物性食品中雙酚A(BPA)含量,調(diào)查當(dāng)?shù)鼐用竦纳攀辰Y(jié)構(gòu),了解膳食中動(dòng)物性食品的比例,進(jìn)而推算出該類途徑雙酚A的暴露量,評(píng)估當(dāng)?shù)鼐用裼蓜?dòng)物性食品暴露雙酚A所帶來(lái)的健康風(fēng)險(xiǎn)。 材料和方法:隨機(jī)選取該市3個(gè)區(qū)的6個(gè)超市及菜市場(chǎng),選取其市場(chǎng)上常見(jiàn)的動(dòng)物性食品13種,共采樣品78份,用液質(zhì)檢測(cè)儀(LC-MS/MS)測(cè)定樣品中BPA的含量,嚴(yán)格控制樣品預(yù)處理和分析過(guò)程的質(zhì)量,方法的檢出限(LOD)為0.5ng/g。隨機(jī)選取武漢市居民(2歲及以上者),180戶,共計(jì)338人作為膳食調(diào)查的對(duì)象,以三天24小時(shí)正餐回顧詢問(wèn)統(tǒng)計(jì),分析膳食調(diào)查結(jié)果計(jì)算出每日該類食物的人均攝入水平。以樣品中的BPA的含量和膳食調(diào)查的數(shù)據(jù),計(jì)算出平均暴露量,結(jié)合當(dāng)前BPA攝入的危害限值的相關(guān)研究資料推算當(dāng)?shù)鼐用裢ㄟ^(guò)攝入動(dòng)物性食品所暴露BPA的風(fēng)險(xiǎn)水平。 結(jié)果:(1)BPA在動(dòng)物性食品中含量的范圍在0.0到12ng/g之間。其中牛肉的平均檢測(cè)值較高(8.92±2.21ng/g),雞蛋中的含量最低(1.44±1.14ng/g)。各種魚(yú)蝦類的檢出值在1.40到5.75ng/g之間。(2)通過(guò)對(duì)武漢市居民膳食調(diào)查結(jié)果的分析,該區(qū)居民人均動(dòng)物性食品的攝入量為277.48g/d,占整個(gè)每日膳食攝入的23%,其中畜肉類(38%)和水產(chǎn)類(33%)的比重較大。(3)通過(guò)動(dòng)物性食品暴露的BPA的總量為682.5ng,人均攝入水平(AD)I為11.38ng/kgbw/day。 結(jié)論:BPA在武漢市場(chǎng)上所售的大多數(shù)動(dòng)物性食品中均有微量檢出。動(dòng)物性食品中的BPA暴露量主要是由畜肉類(48%)和水產(chǎn)類(36%)貢獻(xiàn)的。經(jīng)動(dòng)物性食品暴露的BPA量,,遠(yuǎn)低于目前國(guó)際的限量標(biāo)準(zhǔn)(50μg/gbw/day),通過(guò)攝入該市市場(chǎng)上的動(dòng)物性食品尚不會(huì)對(duì)居民的健康產(chǎn)生不利影響。
[Abstract]:Objective: to detect the content of bisphenol A (BPA) in animal food which is often consumed by residents in Wuhan, investigate the dietary structure of local residents and understand the proportion of animal food in the diet. The exposure to bisphenol A (BPA) via this pathway was calculated to assess the health risks of local residents exposed to bisphenol A in animal foods. Materials and methods: a total of 78 samples were collected from 6 supermarkets and vegetable markets in 3 districts of the city. The content of BPA in the sample was determined by LC-MS / MS, and the quality of sample pretreatment and analysis was strictly controlled. Methods the detection limit (LOD) was 0.5 ng / g. 180 individuals aged 2 years and above in Wuhan were randomly selected and 338 people were selected as the subjects of dietary survey. The daily intake level of this kind of food was calculated by analyzing the results of the dietary survey. The average exposure was calculated from the BPA content in the sample and the data from the dietary survey. The risk level of BPA exposure to animal food by local residents was calculated based on the current research data on the hazard limits of BPA intake.
