【摘要】：正肉制品加工過(guò)程中,動(dòng)物的屠宰嚴(yán)格按照食品安全衛(wèi)生、工作條件和動(dòng)物福利等相關(guān)的法規(guī)的要求進(jìn)行。在肉制品產(chǎn)業(yè)鏈上,屠宰在動(dòng)物福利、肉品質(zhì)量和安全方面起著重要作用,盡管屠宰的時(shí)間特別短,但是潛在的風(fēng)險(xiǎn)和違反規(guī)范的操作都可將在長(zhǎng)期養(yǎng)殖和育肥過(guò)程中已提升的產(chǎn)品質(zhì)量降低。血液含有豐富的營(yíng)養(yǎng)物質(zhì),是微生物生長(zhǎng)良好的基質(zhì),其含有的部分營(yíng)養(yǎng)成分,尤其是血紅蛋白,是促使脂肪氧化的重要物質(zhì),對(duì)肉制品的保質(zhì)期起著關(guān)鍵作用。
[Abstract]:In the processing of meat products, the slaughtering of animals is strictly in accordance with the requirements of food safety, hygiene, working conditions and animal welfare. Slaughter plays an important role in animal welfare, meat quality and safety in the meat industry chain, although the time taken for slaughter is particularly short. But potential risks and unspecified practices can reduce the quality of products that have been improved in the long-term breeding and fattening process. The blood is rich in nutrients and is a substrate for the growth of microorganisms. Some of its nutrients, especially hemoglobin, are important substances to promote fat oxidation and play a key role in the shelf life of meat products.
