雉雞和AA肉雞肉品質(zhì)及腸道氨基酸轉(zhuǎn)運(yùn)載體的比較研究
[Abstract]:The aim of the experiment was to compare the quality indexes of pheasant and AA meat and the carrier of intestinal amino acid transport, and to provide a reference for the difference of meat quality assessment and absorption and utilization of neutral and alkaline amino acids between pheasants and chicken. Thirty-six 18-week-old pheasants and 36 8-week-old AA broilers fed the same diet were randomly divided into 3 repeats with 12 each. The meat quality and the expression of amino acid transport vector mRNA in intestinal tract were measured and compared. The results showed that the meat color value of pectoral muscle and leg muscle of pheasant chicken was significantly higher than that of AA broiler (P0.05), and the water loss rate of pectoral muscle and leg muscle of pheasant chicken was significantly lower than that of AA broiler (P0.05). The shear stress of pectoral muscle of pheasant was significantly higher than that of AA broiler (P0.01), and the shear stress of leg muscle of pheasant was significantly higher than that of AA broiler (P0.05). The mRNA expression of B0, AT and SAT2 in duodenum of pheasants was significantly higher than that of AA (P0.01), and the expression of mRNA in ATB~ (0,) was significantly higher than that of AA (P0.05). The mRNA expression of B0, AT and SAT2 in duodenum of pheasants was significantly higher than that of AA (P0.01), and the expression of mRNA in ATB~ (0,) was significantly higher than that of AA (P0.05). The mRNA expression of CAT2,CAT3,ATB~ (0,) and y ~ LAT1 in the empty ileum of pheasants was significantly higher than that of AA broilers (P0.01). The mRNA expression of CAT1,SAT2,y~ LAT2 was significantly higher than that of AA broilers (P0.05), and the mRNA expression of SAT3 was significantly lower than that of AA broilers (P0.05). The results showed that the meat color and water loss rate of pheasants was better than that of AA broilers, and the tenderness of pheasants was lower than that of AA broilers, and the transport efficiency of intestinal amino acid transport vectors was higher than that of AA broilers.
