川陳皮素對(duì)育肥豬生產(chǎn)性能和肉質(zhì)風(fēng)味的影響

【摘要】:本論文旨在研究添加不同劑量的川陳皮素對(duì)肥育豬生產(chǎn)性能和肉質(zhì)風(fēng)味的影響,據(jù)此闡明川陳皮素在優(yōu)質(zhì)風(fēng)味豬肉生產(chǎn)中應(yīng)用價(jià)值、并篩選適宜的添加劑量。在飼養(yǎng)試驗(yàn)中,選取96頭120日齡平均體重75.9±0.5 kg的杜×(長×大)(DLY,肥育豬),隨機(jī)分成A、B、C、D共4個(gè)處理組,每個(gè)處理4個(gè)重復(fù),每個(gè)重復(fù)6頭豬。A為對(duì)照組,飼喂玉米-豆粕基礎(chǔ)日糧,B、C、D組在基礎(chǔ)日糧上分別添加0.25kg/t、0.50 kg/t和1.00 kg/t川陳皮素。飼養(yǎng)周期為50天,全程自由采食、飲水、按照常規(guī)方法進(jìn)行飼養(yǎng)管理。試驗(yàn)開始、結(jié)束時(shí)統(tǒng)計(jì)階段始重、末重、平均日增重、平均日采食量和耗料增重比等生長性能。在試驗(yàn)豬170日齡時(shí),每組選取4頭豬屠宰,然后進(jìn)行屠宰性能和肉品質(zhì)指標(biāo)測定。試驗(yàn)結(jié)果表明:(1)飼料中添加川陳皮素對(duì)肥育豬平均日增重、平均日采食量、耗料增重比無顯著影響(P0.05)。(2)飼料中添加川陳皮素對(duì)肥育豬胴體重、屠宰率、胴體直長、胴體斜長、背膘厚、瘦肉率、眼肌面積、板油重、皮厚均沒有顯著影響(P0.05)。與對(duì)照組相比,添加量為0.5‰時(shí)瘦肉率和眼肌面積數(shù)值上分別提高了2.3%和9.9%。(3)飼料中添加川陳皮素對(duì)肥育豬pH值、滴水損失、烹煮損失、肉色評(píng)分、剪切力均無顯著影響(P0.05)。當(dāng)川陳皮素添加量為0.5‰時(shí)肉色a*值提高了7.0%,烹煮損失降低了15.9%,剪切力降低了19.1%。(4)飼料中添加川陳皮素對(duì)肥育豬肉中水分和蛋白質(zhì)有顯著升高(P0.05),對(duì)肌內(nèi)脂肪無顯著影響(P0.05)。(5)飼料中添加川陳皮素可顯著提高鮮肉中肌苷酸的含量(P0.05),當(dāng)川陳皮素添加量為0.5‰時(shí),提高了17.3%。當(dāng)川陳皮素添加量為0.5‰時(shí)顯著提高了亞油酸、花生酸的含量分別為14.4%、25.6%(P0.05),而多不飽和脂肪酸提高了14.2%(P0.05);但對(duì)葵酸、月桂酸、肉豆蔻酸、棕櫚酸、硬脂酸和油酸無顯著影響(P0.05)。(6)飼料中添加川陳皮素對(duì)肥育豬內(nèi)臟器官心、肝、脾、肺、腎指數(shù)均無顯著影響(P0.05)。上述結(jié)論表明,在日糧中添加適量的川陳皮素對(duì)育肥豬的生產(chǎn)性能、屠宰性能、器官指數(shù)、肉質(zhì)表觀性狀無顯著影響,但對(duì)豬肉中蛋白質(zhì)含量顯著提高,對(duì)肉質(zhì)風(fēng)味有積極的改善作用。以肌苷酸、亞油酸、花生酸等風(fēng)味物質(zhì)含量為篩選依據(jù),川陳皮素適宜的添加劑量為0.5‰。
[Abstract]:The purpose of this study was to study the effects of different doses of Sichuan pericarp on the performance and meat flavor of fattening pigs, so as to elucidate the application value of Sichuan pericarp in the production of high quality flavor pork and to screen the appropriate additive amount. In the feeding experiment, 96 120 day average body weight of 75.9 鹵0.5 kg (long 脳 large) (DLY, fattening pigs) were randomly divided into 4 treatment groups, 4 replicates per treatment and 6 pigs per replica as control group. The basal diets were fed with corn-soybean meal basal diet, and the basal diets were supplemented with 0.25kg / t 0.50 kg/t and 1.00 kg/t pericarp, respectively. Feeding period is 50 days, the whole course is free to feed, drinking water, according to the routine method of feeding management. At the beginning of the experiment and at the end of the experiment, the growth performance was observed, such as the beginning weight, the end weight, the average daily gain, the average daily feed intake and the ratio of feed consumption to weight gain. At 170 days of age, 4 pigs were slaughtered in each group, and then slaughtering performance and meat quality were measured. The results showed that: (1) the average daily gain, average daily feed intake and feed consumption gain of fattening pigs were not significantly affected by the addition of Chuan Chen Pei in feed (P0.05). (2) on carcass weight, slaughter rate, carcass straight length and carcass oblique length of fattening pigs. Backfat thickness, lean meat percentage, eye muscle area, plate oil weight and skin thickness were not significantly affected (P0.05). Compared with the control group, the lean meat rate and eye muscle area increased by 2.3% and 9.9% respectively when the dosage was 0.5 鈥,
