海藻糖對乳酸桿菌耐熱和室溫貯存保護作用的研究

【摘要】:乳酸桿菌不耐高溫和室溫貯存是其應用于飼料添加劑的一大限制因素,本試驗旨在研究5%(W/V)的海藻糖對三株乳酸桿菌在高溫處理和室溫貯存條件下的保護作用。結果表明:海藻糖能顯著提高乳酸桿菌耐熱性和室溫貯存的存活率,且不同菌株抗逆性能不同,其中F22菌株表現出較G31和H51兩株菌更好的耐熱性和耐貯性。添加海藻糖保護的F22菌株70℃處理5 min,活菌數為(6.0±0.1)×10~5cfu/m L,對照組為(1.2±0.1)×10~2 cfu/m L;室溫貯存15 d,添加海藻糖的試驗組存活率為(127.94±0.23)%,對照組為(89.45±0.78)%。由此可見,海藻糖可作為微生態(tài)制劑高溫加工和室溫貯存的保護劑,提高乳酸桿菌的耐熱性和延長保質期。
[Abstract]:High temperature tolerance of Lactobacillus and storage at room temperature are one of the limiting factors for its application in feed additives. The purpose of this study was to study the protective effect of 5% trehalose on three Lactobacillus strains under high temperature treatment and room temperature storage. The results showed that trehalose could significantly improve the heat resistance of Lactobacillus and the survival rate of storage at room temperature, and the stress resistance of different strains was different.
