運輸應(yīng)激和宰前休息對肉鴨血液指標(biāo)和肉品質(zhì)的影響

【摘要】:為制定合理的肉鴨運輸和屠宰前應(yīng)激緩解策略,提高肉鴨肉品質(zhì),研究將120只42日齡北京鴨隨機分成6組(組1~組6),對不同組別施以不同的運輸時間、休息時間,并測定血液應(yīng)激指標(biāo)和肉品質(zhì)。結(jié)果顯示:組2、組3的T3、T4濃度要極顯著低于組1(P0.01),組6的谷丙轉(zhuǎn)氨酶(ALT)、谷草轉(zhuǎn)氨酸(AST)、肌酸激酶(CK)和谷胱甘肽過氧化物酶(GSH-Px)水平極顯著低于組3、組5(P0.01),組3、組5胸肌蛋白和丙二醛(MDA)含量極顯著高于組1和組6(P0.01),組3胸肌脂肪含量以及p H值都極顯著高于組1(P0.01),組2、組3胸肌蛋白質(zhì)羰基含量極顯著高于組1和組6(P0.01)。結(jié)果表明,長途運輸會給肉鴨帶來很大應(yīng)激,而宰前休息可以有效緩解應(yīng)激,理想休息時間為2 h。
[Abstract]:In order to formulate reasonable strategies for relieving stress before slaughter and transport, and to improve the quality of meat and duck, 120 Beijing ducks aged 42 days were randomly divided into 6 groups (group 1 ~ group 6). Different groups were given different transport time and rest time. Blood stress index and meat quality were measured. The results showed that the concentrations of T3T4 in group 2 and group 3 were significantly lower than those in group 1 (P 0.01), and the levels of alanine aminotransferase (alt), aspartate transaminase (AST), creatine kinase (CK) and glutathione peroxidase (GSH-Px) in group 6 were significantly lower than those in group 3, group 5P 0.01, group 3, group 5, group 5. The contents of MDAs in white and malondialdehyde were significantly higher than those in group 1 and group 6 (P0.01A), the contents of pectoralis fat and pH in group 3 were significantly higher than those in group 1 (P 0.01), and the contents of protein carbonyl in group 2 (group 2) were significantly higher than those in group 1 and group 6 (P 0.01). The results showed that the long distance transportation would bring great stress to the meat ducks, and the rest before slaughter could relieve the stress effectively, and the ideal rest time was 2 hours.
