不同添加劑對舍飼灘羊肉品質(zhì)調(diào)控及生產(chǎn)性能影響的研究

【摘要】:本論文通過飼養(yǎng)試驗、消化代謝試驗和屠宰試驗研究了過瘤胃賴氨酸(RPLys)、共軛亞油酸(CLA)、N-氨甲酰谷氨酸(NCG)對舍飼灘羊生產(chǎn)性能、肉品質(zhì)、消化代謝和血液生化指標的影響,旨在篩選出即可提高灘羊生產(chǎn)性能,又可改善羊肉品質(zhì)的最適添加劑。試驗共分為四部分:試驗一:不同添加劑對舍飼灘羊生長性能的影響選擇健康無病的育成灘羊32只,按體重相近原則隨機分為4組,每組8只(母羊5只,公羊3只)。對照組飼喂基礎(chǔ)日糧,試驗Ⅰ組飼喂基礎(chǔ)日糧+8g/d RPLys,試驗Ⅱ組飼喂基礎(chǔ)日糧+2%CLA,試驗Ⅲ組喂基礎(chǔ)日糧+0.2%NCG。全期試驗60d,在第Od和第60d分別測定各處理組體重、體尺指標,并記錄每日飼料采食量。結(jié)果表明:RPLys(試驗Ⅰ組)、CLA(試驗Ⅱ組)、NCG(試驗Ⅲ組)對舍飼灘羊體高、體長、管圍增長幅度無顯著差異(P0.05),RPLys和CLA均可顯著提高灘羊公羊胸圍增長幅度(P0.05),極顯著提高灘羊母羊胸圍增長幅度(P0.01),而NCG對灘羊公、母羊胸圍增長幅度有提高的趨勢(P0.05);本試驗以試驗Ⅱ組平均干物質(zhì)采食量最高,為900.48g/d,其次為試驗Ⅰ組,對照組最低;試驗Ⅱ組平均日增重顯著高于其他三組(P0.05),試驗Ⅰ組和試驗Ⅲ組與對照組平均日增重?zé)o顯著差異(P0.05)。試驗二:不同添加劑對舍飼灘羊產(chǎn)肉性能及肉品質(zhì)的影響本試驗在上述日糧條件下,經(jīng)60d飼養(yǎng)試驗,分別取各處理組3只公羊進行屠宰試驗,并測定肉品質(zhì)。結(jié)果表明:RPLys、CLA、NCG的添加均對屠宰率、胴體凈肉率和肉骨比無顯著差異(P0.05),但卻改變了胴體肌肉和脂肪的比率。試驗Ⅰ組胴體瘦肉率有降低的趨勢(P0.05),試驗Ⅱ組和試驗Ⅲ組瘦肉率分別極顯著(P0.01)、顯著(P0.05)高于對照組。各處理組眼肌面積、GR值、肌肉pH值、失水率、熟肉率、大理石花紋評分及肉常規(guī)指標無顯著差異(P0.05)。試驗Ⅱ組背膘厚度顯著低于試驗Ⅰ組(P0.05);肉色b*值和L*值各處理組間無顯著差異(P0.05),但CLA顯著提高了肉色a*值(P0.05),而NCG有提高的趨勢(P0.05)。肌內(nèi)脂肪含量以試驗Ⅱ組最高,顯著高于對照組(P0.05)和試驗Ⅰ組(P0.05),試驗Ⅱ組肌內(nèi)脂肪含量顯著高于試驗Ⅰ組(P0.05)。通過頂空固相微萃取-氣質(zhì)聯(lián)用技術(shù),本試驗中對照組、試驗Ⅰ組、試驗Ⅱ組和試驗Ⅲ組分別鑒定出55種、64種、66種、61種揮發(fā)性風(fēng)味物質(zhì),有26種揮發(fā)性化合物為各處理組所共有,其中試驗Ⅰ組和試驗Ⅲ組己醛相對含量較高,不利于改善肉品風(fēng)味。試驗Ⅱ組己醛相對含量比對照組降低1.201%,一定程度上降低了肉中的不良風(fēng)味物質(zhì)。試驗三:不同添加劑對舍飼灘羊消化代謝的影響取各處理組3只試驗羊公羊,采用單只栓系飼養(yǎng)進行消化代謝試驗,日糧組成與飼養(yǎng)方式同試驗一。每天收集、稱量試驗羊糞、尿及剩料量,測定飼料養(yǎng)分的表觀消化率和氮表觀代謝率。結(jié)果表明:除試驗Ⅱ組極顯著提高粗脂肪表觀消化率(P0.01),極顯著降低中性洗滌纖維和酸性洗滌纖維表觀消化率外(P0.01),試驗Ⅰ組、試驗Ⅲ組及試驗Ⅱ組其他養(yǎng)分表觀消化率無顯著差異(P0.05);而氮表觀代謝率三個添加劑組均有不同程度提高,試驗1組氮表觀代謝率極顯著高于對照組(P0.01),試驗Ⅱ組和試驗Ⅲ組均顯著高于對照組(P0.05)。試驗四:不同添加劑對舍飼灘羊血液生化指標的影響日糧條件同試驗一,在飼養(yǎng)試驗正試期第Od、15d、30d、45d、60d抽取各處理組試驗羊空腹狀態(tài)下血樣,靜置取血清,測定各處理組試驗羊不同時期的血液生化指標。結(jié)果表明:RPLys、CLA、NCG對血清總蛋白含量、血清甘油三酯含量無顯著影響(P0.05)。試驗Ⅰ組在試驗后期血糖濃度顯著升高(P0.05)。試驗Ⅱ組血清總膽固醇隨飼喂時間的持續(xù)而降低,且血糖濃度保持相對穩(wěn)定。綜上所述,CLA兼具提高舍飼灘羊生長和改善肉品質(zhì)的雙重功效,是灘羊高效飼養(yǎng)和生產(chǎn)高檔羊肉的最適添加劑。
[Abstract]:This paper through the feeding experiment, digestion and metabolism test and slaughter test of rumen protected lysine (RPLys), conjugated linoleic acid (CLA), N- N-carbamoylglutamate (NCG) on the production performance and meat quality in sheep, metabolism and blood biochemical indexes of digestion, aims at screening out can improve the production performance of sheep the most suitable additives, can improve the quality of mutton. The test is divided into four parts: experiment one: effect of different additives on growth performance in Tan sheep healthy bred sheep 32, according to the principle of similar weight were randomly divided into 4 groups, 8 rats in each group (5 ewes and 3 RAMS). The control group was fed basal diet, group I fed the diets with +8g/d RPLys, the second group was fed basal diet +2%CLA group fed test III test 60d the basal diet +0.2%NCG., in Od and 60d were measured in each group of body weight, body measurement, and record daily Feed intake. The results showed that: RPLys (group I), CLA (test group II), NCG (test group) for feeding sheep body height, body length, circumference growth rate had no significant difference (P0.05), RPLys and CLA can significantly improve the growth rate of sheep ram bust (P0.05), significantly to improve the growth rate of Tan sheep ewes circumference (P0.01), and NCG on the growth rate of male, ewe bust had increasing trend (P0.05); in this experiment, the experimental group II average dry matter intake was highest, followed by the 900.48g/d group, and lowest in the control group; the test group average daily gain was significantly higher than the other the three group (P0.05), group I and III group and control group had no significant difference in average daily gain (P0.05).
