【摘要】：在資本、信息、制度、政策、民意激流勇進(jìn)地淘洗下,紀(jì)錄片內(nèi)核更迭始發(fā)于新舊產(chǎn)業(yè)轉(zhuǎn)型的縫隙間,短短5年中國美食紀(jì)錄片經(jīng)歷了“品牌元年”、“平臺(tái)元年”、“公眾元年”三個(gè)階段。新千年以來,中國紀(jì)錄片面對(duì)市場(chǎng)壁壘徘徊不前,因此促使后續(xù)的政策制度和市場(chǎng)制度(標(biāo)準(zhǔn)/價(jià)值/規(guī)范體系)更為精準(zhǔn)、直接地著力。直至美食紀(jì)錄片的代表《舌尖上的中國》的熱播和臺(tái)網(wǎng)聯(lián)動(dòng)效應(yīng)的助推成就美食紀(jì)錄片第一塊金字招牌——“舌尖品牌”的誕生,繼而拓開了本土美食文化紀(jì)錄片的多樣化格局。對(duì)此的描述和闡釋,本文引入了“勢(shì)”這一概念,按《現(xiàn)代漢語詞典》的解釋,“勢(shì)”的本身即“力量及其呈現(xiàn)的趨勢(shì)”,表現(xiàn)在“臺(tái)前顯現(xiàn)”的政策支持、媒體話語、業(yè)界與公眾的關(guān)注,也體現(xiàn)在“幕后支撐”的投資、制作、發(fā)行、收視等方面。從整體格局看,2012年的中國美食紀(jì)錄片為整個(gè)紀(jì)錄片的發(fā)展開創(chuàng)了一個(gè)高調(diào)的“起勢(shì)”,繼而在看似料峭的春寒之下,暗流涌動(dòng)。引發(fā)各方勢(shì)力謀定而后動(dòng),強(qiáng)勢(shì)醞釀“蓄勢(shì)”的征兆,它們共同指向產(chǎn)業(yè)新局的創(chuàng)造和規(guī)劃,并且產(chǎn)生了一些意義非同小可的“破勢(shì)”之舉。本文將選取《舌尖Ⅰ》和《味道中國》分別作為2012至今中國美食紀(jì)錄片的關(guān)鍵幀,以《舌尖Ⅰ》《舌尖Ⅱ》《舌尖上的新年》《舌尖Ⅲ》為范體,透析這個(gè)時(shí)間段中國美食紀(jì)錄片產(chǎn)業(yè)發(fā)展的表現(xiàn)與內(nèi)涵:探索《舌尖Ⅰ》的同期影片《中國美食探秘》;《舌尖Ⅱ》的姐妹篇《一城一味》;“舌尖大電影”的開拓篇《味道中國》;受舌尖系列啟發(fā)而生成的“微紀(jì)錄片”《日食記》以及成就“互聯(lián)網(wǎng)+美食”新形式的《宅人食堂》等系列中國美食紀(jì)錄片流變發(fā)展的處境與成因。
