不同采收貯藏方式對(duì)‘新梨7號(hào)’果實(shí)品質(zhì)、果皮結(jié)構(gòu)的影響

【摘要】:本試驗(yàn)以‘新梨7號(hào)’為試材,分別于8月5日與9月6日進(jìn)行采摘,貯藏于室溫,果窖,冷庫三種環(huán)境中,周期性測(cè)定果實(shí)的各項(xiàng)理化指標(biāo)和果皮結(jié)構(gòu),探討不同采收貯藏方式對(duì)‘新梨7號(hào)’貯藏期品質(zhì)和果皮結(jié)構(gòu)的影響,為‘新梨7號(hào)’的貯藏保鮮提供理論依據(jù)和實(shí)踐指導(dǎo)。結(jié)果表明:1、最近采收期,8月份采收的‘新梨7號(hào)’果實(shí)的硬度、有機(jī)酸含量、可溶性糖含量、葉綠素含量、固形物含量含量分別為分別6.46 kg/cm2、0.0154%、3.77%、0.42 mg/g、10.045%,9月份樣的對(duì)應(yīng)指標(biāo)分別為6.094 kg/cm2、0.0149%、3.72%、0.33 mg/g、9.52%,8月份樣的各項(xiàng)檢查指標(biāo)為均高于9月份樣,延遲采收降低了‘新梨7號(hào)’果實(shí)品質(zhì)。2、不同采收期不同貯藏環(huán)境中,‘新梨7號(hào)’果實(shí)的有機(jī)酸含量、硬度、葉綠素含量均呈現(xiàn)下降趨勢(shì);8月份采收的果實(shí)的可溶性糖含量在貯藏過程中呈先降后升的趨勢(shì),9月份樣總體呈先升后降低再升高的趨勢(shì);8月份樣的固形物含量呈先升后降再升高的趨勢(shì),9月份樣則呈先降后升的趨勢(shì),其中室溫環(huán)境中的可溶性糖和可溶性固形物含量變化最大。3、‘新梨7號(hào)’果實(shí)在貯藏過程有明顯的呼吸高峰,符合呼吸躍變型果實(shí)的特點(diǎn)。采收期和貯藏環(huán)境影響果實(shí)的呼吸高峰,與8月份采收的‘新梨7號(hào)’相比,9月份樣呼吸高峰出現(xiàn)的時(shí)間晚,高峰時(shí)的呼吸速率低;不同的貯藏環(huán)境對(duì)呼吸高峰的影響不同,室溫中環(huán)境對(duì)呼吸高峰的影響主要體現(xiàn)在呼吸高峰出現(xiàn)時(shí)的呼吸速率,對(duì)不同采收期的果實(shí)呼吸高峰出現(xiàn)的時(shí)間影響不大,果窖和冷庫環(huán)境則既影響果實(shí)呼吸高峰出現(xiàn)的時(shí)間,又影響呼吸高峰的速率,冷庫和果窖環(huán)境可以明顯推遲‘新梨7號(hào)’果實(shí)呼吸高峰的出現(xiàn),對(duì)‘新梨7號(hào)’的貯藏效果更好。4、同一貯藏條件下9月份樣各果皮組織結(jié)構(gòu)厚度均大于8月份樣的值。不同貯藏條件下,其蠟質(zhì)層、角質(zhì)層、表皮細(xì)胞、果皮總厚度變化較明顯。果窖與冷庫環(huán)境下,可以明顯看出蠟質(zhì)、角質(zhì)、木栓層細(xì)胞變化明顯,其厚度均有所增加,表皮細(xì)胞與木栓層細(xì)胞組織完整,排列緊密,貯藏效果優(yōu)于室溫環(huán)境。
[Abstract]:In this experiment, 'Xinli 7' was harvested on August 5 and September 6, respectively, and stored in room temperature, fruit cellar and cold storage. The physicochemical indexes and pericarp structure of fruits were determined periodically.The effects of different harvest and storage methods on the quality and pericarp structure of 'Xinli 7' during storage period were discussed, which provided theoretical basis and practical guidance for the storage and preservation of 'Xinli 7'.The results showed that the hardness, organic acid content, soluble sugar content, chlorophyll content of 'Xinli 7' fruit collected in August, the most recent harvest period, were determined.Delayed harvest decreased the fruit quality of 'Xinli 7', and decreased the content of organic acid and hardness of 'Xinli 7' fruit in different harvest periods and different storage environments.The content of soluble sugar in the fruit harvested in August decreased first and then increased during storage. The total content of chlorophyll in September increased first and then decreased and then increased.The trend of rising first and then descending and then rising was that in September, the sample showed a trend of first decreasing and then rising.The content of soluble sugar and soluble solids changed the most in room temperature environment. The fruit of 'Xinli 7' had obvious respiration peak during storage, which was consistent with the characteristics of respiratory jump fruit.The harvest period and storage environment affected the respiration peak of fruit. Compared with 'Xinli 7' harvested in August, the respiration peak in September appeared later and the respiration rate at peak was lower, and different storage environment had different effects on respiration peak.At room temperature, the effect of environment on respiration peak was mainly reflected in the respiration rate at the time of peak respiration, but it had little effect on the time of peak respiration of fruit at different harvest periods, while the fruit cellar and cold storage environment affected the time of peak respiration of fruit.The rate of respiration peak was also affected, and cold storage and fruit cellar environment could obviously delay the emergence of respiration peak of 'Xinli 7' fruit.The storage effect of 'Xinli 7' was better than that of 'Xinli 7'. Under the same storage condition, the thickness of tissue structure of each peel in September was greater than that in August.Under different storage conditions, the total thickness of waxy layer, cuticle, epidermis and pericarp changed obviously.Under the conditions of fruit cellar and cold storage, the changes of waxy, horny and cork layer cells were obvious, and the thickness of epidermal cells and cork layer cells were all increased, the tissue of epidermal cells and cork layer cells were complete, arranged closely, and the storage effect was better than that of room temperature environment.
