【摘要】:近代上海對肉類,特別是對牛肉的大量需求,是隨著租界開埠后僑民的涌入和西方影響的擴大而產(chǎn)生的,由于中國人習(xí)慣的肉類加工和屠宰方式在西人看來極不衛(wèi)生,于是如何保障租界西人的肉類供應(yīng)衛(wèi)生安全,便成為上海租界工部局的棘手問題。本文通過考察上海公共租界工部局建設(shè)肉類供應(yīng)衛(wèi)生管理體系的過程,重點關(guān)注其中工部局與中國商販的互動,以揭示近代上海在現(xiàn)代化過程中,華洋互動的多面性。 第一部分述上海租界的肉類供應(yīng)來源及早期外僑生活,以交待工部局建設(shè)肉類供應(yīng)衛(wèi)生管理體系的大背景:上海租界外僑的肉類供應(yīng),依靠中國商販經(jīng)營,其中與外僑切身利益關(guān)系最密切的是牛肉的供應(yīng)。第二部分述工部局肉類衛(wèi)生管理體系的建立:菜場稽查員的設(shè)立和肉鋪納入執(zhí)照管理。通過1872年沒收牛肉事件等說明工部局的有限權(quán)力。工部局通過頒發(fā)執(zhí)照試圖擴大權(quán)力并保證工部局屠宰場的貨源。第三部分述工部局肉類衛(wèi)生管理體系的完善:工部局斐倫路屠宰場和肇勒路屠宰場的建立。通過分析屠宰場的整個建造過程以及其最終采用的經(jīng)營方式,管窺中國商販在工部局決策過程中的影響。
[Abstract]:The large demand for meat, especially beef, in modern Shanghai came into being with the influx of expatriates after the opening of the concession and the expansion of the influence of the West. Because the Chinese people are accustomed to meat processing and slaughtering methods which are regarded as extremely unhygienic by the westerners, how to ensure the hygienic and safe supply of meat to the westerners in the concession area. By investigating the construction process of the sanitary management system of meat supply, this paper focuses on the interaction between the Ministry of Industry and Chinese traders. In order to reveal the modern Shanghai in the process of modernization, the interaction of many aspects of the ocean. The first part describes the origin of meat supply in Shanghai concession and the life of foreigners in the early years, in order to explain the background of the construction of sanitary management system of meat supply by the Ministry of Industry: the meat supply of aliens in Shanghai concession depends on Chinese traders. Among them, the most closely related to the interests of foreigners is the supply of beef. The second part deals with the establishment of the meat hygiene management system of the Ministry of Industry:. Through the 1872 confiscation of beef, the limited authority of the ministry of industry is explained. The bureau of industry tries to expand its powers by issuing a license and ensures the supply of the slaughterhouse of the bureau of the ministry of industry. The third part deals with the improvement of the meat hygiene management system of the Ministry of Industry:. The establishment of Fielon Road slaughterhouse and Zhaole Road slaughterhouse in the Ministry of Industry. The whole construction process of slaughterhouse and the way of operation are analyzed. Peek at the influence of Chinese traders in the decision-making process of the Ministry of Industry.
